Ingredients:
1 pound candied cherries, quartered (red and green)
1 pound candied pineapple, cut into small pieces
8 cups pecans, coarsely chopped
1 ½ cups all-purpose flour
2 sticks unsalted butter, softened
5 large eggs
1 cup sugar
¼ cup bourbon
Notes: It is best to make very small, bite-size cookies. This will give each cookie a crunchy texture.

INGREDIENTS & PROCESS:
1 - Orange
Squeeze The Juice
2 Tbsp Cranberry
2 Tbsp Apricot
2 Tbsp Black Raisin
2 Tbsp Red Cherry
2 Tbsp Dates
1/3 Cup Tutti Frutti
Soak For 30 Min.
Separate 2 Tbsp Fruits
1 Cup Flour
2 Tbsp Cocoa Powder
1 Tspn Baking Powder
½ Tspn Baking Soda
½ Tspn Cinnamon Powder
¼ Tspn Nutmeg Powder
Sieve
2/3 Cup Brown Sugar
Soaked Fruits
1 Tbsp Almond
1 Tbsp Pistachio
1 Tbsp Cashew Nut
1 Tspn Orange Zest
¼ Cup Oil
¾ Cup Milk
Mix Well
5 Inch Oil Greased Mould With Baking Paper
Pour The Batter
Soaked Remaing Dry Fruits
Place a Pan With Wire Stand
Pre Heat For 5-7 Min.
Place the Mould
Cook For 40-45 Min.

Ingredients
1/2 pound dried figs
1/4 pound raisins
2 ounces candied cherries, coarsely chopped
2 ounces dried apricots, coarsely chopped
1 tablespoon honey
2 tablespoons dry sherry
1 tablespoon freshly squeezed lemon juice
6 ounces chopped pecans
Kosher salt
1/2 pound (2 sticks) unsalted butter, at room temperature
1/2 teaspoon ground cloves
1/2 cup superfine sugar
1/3 cup light brown sugar, firmly packed
1 extra-large egg
2 2/3 cups all-purpose flour
Directions
Snip off the hard stems of the figs with scissors or a small knife and coarsely chop the figs. In a medium bowl, combine the figs, raisins, cherries, apricots, honey, sherry, lemon juice, pecans, and a pinch of salt. Cover with plastic wrap and allow to sit overnight at room temperature.
In the bowl of an electric mixer fitted with the paddle attachment, cream the butter, cloves, superfine sugar, and brown sugar on medium speed until smooth, about 3 minutes. With the mixer on low speed, add the egg and mix until incorporated. With the mixer still on low, slowly add the flour and 1/4 teaspoon salt just until combined. Don't over mix! Add the fruits and nuts, including any liquid in the bowl.
Divide the dough in half and place each half on the long edge of a 12 by 18-inch piece of parchment or waxed paper. Roll each half into a log, 1 1/2 to 1 3/4-inch thick, making an 18-inch-long roll. Refrigerate the dough for several hours, or until firm.
Preheat the oven to 350 degrees.
With a small, sharp knife, cut the logs into 1/2-inch-thick slices. Place the slices 1/2-inch apart on ungreased sheet pans and bake for 15 to 20 minutes, until lightly golden.

Semoline Fruit Cake | Suji Fruit Cake – Both of these versions tasted scrumptious and delightful. These cakes are gone within an hour, can’t stop grabbing them. It’s an easy recipe. Ingredients:
I used 15cm or 6x6 inch pan
170g [¾ cup] unsalted butter
120g [½ cup + 2 tbsp] semolina flour
120g [½ cup] whole milk
120g [1 cup] all-purpose flour
7g [1½ tsp] baking powder
100g [⅔ cup] dried mixed fruits
130g [½ cup + 2 tbsp] caster sugar
1 tsp vanilla extract
¼ tsp salt
3 eggs OR 120g [½ cup] plain yogurt
Instructions:
1. Preheat oven at 175°C/348°F.
2. In a mixing bowl, add in the butter. Set aside until softened.
3. Add the milk into the semolina flour and soak for about 30 minutes.
4. Sift the dry ingredients: all-purpose flour and baking powder. Give them a quick mix. Set aside.
5. Scoop 1 tbsp of the flour into the bowl of mixed fruits. Mix to coat them well.
6. Once the butter is softened, add sugar. Mix on high speed until creamy and fluffy and pale for at least 1-2 minutes. Scrap the bowl occasionally.
7. Add in the vanilla extract and salt. Mix until well combined.
8. Add in the eggs, one at a time. Mix until well combined. The batter may seem curdled, it is normal.
[FOR EGGLESS: replace the eggs with the plain yogurt, add all at one go]
9. Add in the soaked semolina. Mix until well combined.
10. Fold in the sifted ingredients in 2 batches. Fold until combined.
11. Transfer into the prepared pan, greased and lined with parchment paper.
12. Bake in preheated oven at 175°C/348°F for 50-55 minutes.
13. Let it cool on the cooling rack before cutting.

Easy And Moist Holiday Fruit Cake!!
Everyone loves this cake that I prepared during Holidays. Super moist and easy to make kind of fruit cake but without alcohol which is child friendly.
Here's what you'll need:
2 cups of any candied fruits
1/3 cup apple juice (80ml)
1/2 cup butter (110g) room temp
3/4 cup dark brown sugar (150g)
2 large eggs
1 teaspoon vanilla extract (5ml)
2 tablespoons honey (30g)
2 tablespoons oil (30ml)
1 and 1/2 cup plain flour or all purpose flour(190g)
1 tsp baking powder (5g)
1/2 tsp nutmeg (2g)
1/2 tsp cinnamon powder(2g)
1 tsp salt (5g)
1 cup of any dried nuts
2 tsp of lemon zest
1/3 cup apple juice
