The spicy dry-fried beef is a perfect example of the dry-frying technique unique to Sichuan cuisine. The shredded beef is un-marinated, quickly stir fried in a wok to drive off the moisture and intensify the beef flavor. The shredded beef will be stir fried twice with aromatic spices to absorb more flavor. The end result is spicy and aromatic beef with crispy and chewy bites.
The key to this dish is to control the temperature when dry frying the beef, otherwise the shredded beef can be easily overcooked.

Recipe:
1-2 lbs rib tips, riblets or thinly sliced pork chops
salt and pepper to season ribs (I like using garlic salt)
marinate for at least 1hr to a few days in a ziplock bag.
To fry ribs, coat with a little bit of all purpose flour, and fry until dark golden brown, about 15min over medium high heat in 2 inches of corn oil in a large pot or deep pan.
Sauce:
1 cup ketchup
1 cup sweet chili sauce
mix equal parts of each and heat to quick boil on stove, use to coat ribs once they are fried. Sticky sauce over crispy ribs!

With just a few simple ingredients I'll show you how to make the best fried shrimp with salt and pepper. With a lot of garlic, a hit of chilis and touch of lime to punch up the flavor for this Chinatown seafood favorite.

► Ingredients:
300g (11oz) Shrimp (I had about 18 shrimps)
1 Tablespoon Light Soy Sauce
1 Teaspoon Fish Sauce
1/2 Teaspoon Pure Sesame Oil
2 Teaspoons Oil
1 Tablespoon + 1/4 Cup Cornflour
2 Thai Spur Chilis (or jalapeno peppers)
2 Thai Chilis
3 Large Garlic Cloves
1 Stalk Spring Onion
1/2 Teaspoon Salt
1/2 Teaspoon Ground White Pepper
1/2 Teaspoon Ground Black Pepper

SO TASTY! Spicy Crispy Pork Belly With Onions and Soya Sauce Aunty Mary Cooks. When pork belly is fried until crispy, it tastes especially good when added to a good seasoning sauce. Ginger and chillies spice it up to a notch higher. This dish is very good with plain rice. Aunty Mary shows how to cook this easy recipe spicy pork belly with onions and soya sauce.
Ingredients
750g pork belly, remove skin, slice thinly
3-4 spring onions, cut into sections
3 medium onions, peel and cut into chunks
1/2 bulb garlic, peel and chop finely
1 knob ginger, slice thinly
1 Tbsp dried crushed chillies
Marinade for Pork
1/2 tsp salt
3 Tbsp corn starch
Seasoning Sauce
1&1/2 Tbsp sugar
1&1/2 Tbsp oyster sauce
1 Tbsp soya sauce
1/2 Tbsp dark soya sauce
Note:
1. Can add more crushed chillies if prefer more spicy
2. If prefer opinions to be more crunchy, don’t fry it too long.
