Meso's Southern Tomato Pie
6 8 medium Fresh Tomatoes
2 tbsp. Sour Cream
½ block (4 oz.) room temperature Cream Cheese
2 tbsp. Mayonnaise
1 cup Cheeses (I used cheddar-mozzarella, Parmesan and fontina)
1 tsp. chopped Basil
2 dashes Cayenne Pepper
1 dash Salt
½ tsp. Black Pepper
1 tsp. Onion Powder
1 tsp. Garlic Powder
1 Egg (beaten)
2 Tbsp. Dijon or Spicy Brown Mustard
½ cup Chopped Spring Onion
1 Deep Dish Pie Crust
Fresh herbs if possible (thyme – basil)
Bake crust blind for 12 – 15 minutes until crust is lightly browned. Use beans or rice and wax/parchment paper (do not use foil). You might want to cover edges of crust with foil to prevent over cooking. Mix all ingredients except tomatoes (set aside). Slice tomatoes and bake in oven for 15 minutes and dry off further on paper towels. When crust comes out of the oven, Layer the tomatoes and cheese sauce mix beginning with thin layer of cheese sauce mix on the bottom and ending with thick layer of cheese sauce mix. ENJOY!

Green Tomato Pie Recipe - from Aunt Sammy's Radio Recipes. It's the end of summer and we are left with some green tomatoes that just won't ripen; the days are too short now and the temperature is getting cooler. So what to do with the unripe green tomatoes? Fried green tomatoes are always an option, but let's try making a pie from green tomatoes. Green tomato pie! So who was Aunt Sammy, Aunt Sammy's Radio Recipes? Since I'm not American I didn't make the connection to Uncle Sam...
Ingredients:
6 medium sized green tomatoes
2 tablespoons water
½ lemon sliced
2 tablespoons cornstarch
1 cup sugar
1/8 teaspoon salt
¼ teaspoon cinnamon
2 tablespoons butter
Pastry ( )
Method:
Wash the tomatoes, remove the stem and blossom end, and cut into thin slices.
Cook the tomato, water, and lemon until the tomatoes are almost tender and drain.
When the tomato liquid has cooled add the cornstarch, which has been mixed with the sugar and salt, and cook until thickened.
Add the tomatoes, cinnamon, and butter, and mix thoroughly.
Pour the hot mixture into a baked pastry shell, add the top sheet of dough and bake in a moderately hot oven (375º to 400ºF.) for about 30 minutes, or until golden brown.

The tomato pie recipe is shown below. This is my favorite tomato recipe during the summer months. It's so savory and juicy! It's a great recipe to try with your fresh tomatoes out of your garden or local produce vendor. So flavorful and mouth watering. I can't wait until July and August to pick my own fresh tomatoes to use. This tomato pie recipe is quick and super easy to assemble. Perfect for a side dish, dinner party or lunch!
First start with as fresh as possible tomatoes. About four will be fine. You want to slice them and let them drain in a colander or paper towels. Then take a homemade pie crust or frozen pie crust and layer the tomatoes on the bottom. See my tip below on how to avoid the soggy crust by pre-baking it. Add your basil on top of the tomatoes and then chopped green onion and salt and pepper to taste. Then you are ready to add the cheese and mayonnaise mixture on the top. Just spread this evenly across the top and bake at 350 degrees for 30 mins or until golden brown. Enjoy your tasty tomato pie! See ingredients and steps below.
Ingredients and Directions:
-Start with fresh tomatoes from your garden;
four, medium-size should be enough
-Slice and salt them, then let them drain
for 20-30 minutes in a colander or paper towel
-Layer tomatoes in premade pie crust
tip: pre-bake crust for 10 min can prevent soggy crust
-Don't be shy! Lots of tomatoes!
-Top with 8 - 10 chopped basil leaves
tip: add some cooked bacon pieces for a BTP pie!
-Add 3 chopped green onions
and salt and pepper to taste
-I like to add 1 fresh, chopped jalepeno
pepper for a little kick
-In a bowl, mix 1 cup grated mozzarella,
1 cup grated cheddar and 1 cup mayonnaise
-Spread cheese/mayo mixture evenly
over the pie and bake at 350 for 30 minutes and browns edges

We used a pre-made pie shell but obviously homemade would be better!

1 cup grated cheddar cheese
