How To make Fresh Tomato Vegetable Soup
6 md Tomatoes
3/4 c Red onions, chopped
3/4 c Celery, diced, include tops
4 ts Olive oil
3 ea Garlic cloves, minced
3/4 c Zucchini, diced
3/4 c Corn kernels
4 1/2 c Vegetable broth
3/4 ts Salt
5 ts Basil, chopped
1/2 c Small pasta shells, uncooked
Black pepper, to taste Plunge the tomatoes into boiling water & then into iced water to remove their skins. Chop the tomatoes & set aside. In a stockpot, saute the onions & celery in the oil over medium heat until tender, 5 minutes. Stir in the garlic, zucchini, corn & saute for another 2 minutes. Add the broth & bring to a boil. Add the tomatoes, salt & basil. Reduce the heat, cover & simmer for 15 minutes, stirring occasionally. Add the pasta, cover & simmer for 30 minutes (Seems rather a long time to me!). Sprinkle with the pepper & serve hot.

Our roasted tomato soup with a base of roasted tomatoes, onion, and whole garlic cloves is one of our favorite ways to cook with tomatoes. Get a grilled cheese sandwich ready because you will love this soup!
Roasted Tomato Soup Ingredients (the recipe is on Inspired Taste)
• 3 pounds fresh tomatoes, try a mix of tomatoes like heirlooms, cherry, vine, or plum tomatoes
• 6 medium cloves garlic, peeled
• 1 medium onion, peeled and quartered
• 1/3 cup olive oil
• Salt and freshly ground black pepper
• 2 cups vegetable or chicken broth
• 2 tablespoons butter
• Pinch of red pepper flakes, optional for a bit of heat
• 1 cup fresh basil leaves
• 1/4 cup heavy cream

Creamy Tomato Soup ????
8 Roma tomatoes
1 onion
6-8 cloves of garlic
1 shallot
1 sprig of Rosemary and thyme
Cover in olive oil, salt, and chili flakes
Roast at 400F for about 1 hour
3 Calabrian Chilis
3 sun dried tomatoes
1/3 cup veggie broth / stock
1/4-1/2 cup heavy cream (preference)
Couple leaves of basil

2 TBSP EVOO
1/2 TBSP salt
2-3 cloves garlic
1 yellow onion
1/2 TBSP Curry powder
7-8 medium carrots
8-10 cups chicken stock
chives to finish
creme fraiche to finish.
In a pot over medium heat, add onions, and cook for 4 minutes, then add your garlic and curry powder cook for 1 minute.
Then add carrots, chicken broth, salt, and pepper. Bring to a boil Drop to a simmer and cook until everything is soft. then blend your soup until smooth. Season to taste with salt and pepper, and serve with chives and sour cream.
