A Gougere is a French cheese puff made with savoury choux pastry. It has the addition of cheese making it a great savoury appetiser. They are crunchy on the outside and soft in the inner centre, plus they are hollow making them super light. You can always add your favourite filling, although it's not required as they are delish as is.

INGREDIENT LIST
Makes: One 10 loaf
For the dough
3/4 cup + 3 tbsp lukewarm whole milk
2 cups all-purpose flour (240 grams)
1/4 cup unsalted butter, softened
2 tsp instant yeast (or 2 1/4 teaspoons active dry yeast)
1/4 tsp sugar
1 tsp salt
1/4 cup potato flour
For the filling
1 egg, beaten
2 tbsp dried rosemary
1/2 cup grated Pecorino cheese
1 tbsp dried thyme
1/4 tsp garlic powder
1/2 cup butter, softened
1/4 tsp salt
