How To make Four Cheese Rotini w/ Asparagus
3 c Rotini pasta
1 lb Asparagus cut in 1" pieces
1 pk Knorr Primavera sauce mix
3/4 c Milk
3/4 c Water
4 oz Goat cheese, crumbled
1 ts Tarragon or dillweed, dried
In a large pot, cook pasta in boiling salted water for 3-5 minutes. Add asparagus, continue cooking for 5 minutes or until pasta is al dente. In a saucepan combine sauce mix, water and milk. Bring to a boil over medium-high heat, stirring constantly. Reduce heat to med-low; add cheese and tarragon or dillweed. Continue cooking 3-5 minutes stirring constantly. Drain pasta and asparagus; return to large pot. Add sauce; toss to combine. Variation: Substitute 3 cups broccoli florets for asparagus. Substitute cream cheese for gaot chees and add 1 Tbsp Dijon mustard.

Creamy One Pot Pasta with Asparagus, Bacon & Mushrooms
This pasta is wrapped in a dreamy creamy sauce and loaded with asparagus, crispy bacon and mushrooms. Better still, it's all made in one pot! Chris x

Creamy One Pot Pasta | Serves 4
????INGREDIENTS????
12.3oz / 350g Penne, uncooked
3 cups / 750ml Chicken Stock, not piping hot! (plus 1/3cup/80ml reserved)
1 cup / 250ml Heavy/Double Cream, at room temp
1/2 cup / 40g freshly grated Parmesan
5.3oz / 150g Asparagus, diced (woody ends removed)
5.3oz / 150g Mushrooms of choice, sliced (here I use Chestnut Mushrooms)
5.3oz / 150g Bacon, diced
2 tbsp Unsalted Butter
2 cloves of Garlic, finely diced/minced
2 tbsp finely diced Fresh Parsley
1 medium Onion, finely diced
Salt & Pepper, to taste
????METHOD????
In a large pot over medium heat add diced bacon and fry until the fat fully renders and the bacon is nice and crispy. Don't be tempted to crank up the heat, you want it fairly low and slow to render down the fat. Remove bacon from pot and place in a bowl to one side, leaving the bacon fat behind.
Melt in 2 tbsp butter, then add asparagus, mushrooms and onion. Fry until they begin to brown then add garlic and fry for a couple of minutes longer.
Pour in 3cups/750ml chicken stock and 1cup/250ml cream (important the cream is at room temp and the stock isn't too hot or the cream may curdle). Give it a stir, then add the uncooked pasta.
Turn heat to low medium and keep it on a gentle simmer until the penne is al dente, stirring frequently as you go. If the sauce soaks up before the pasta is cooked add another 1/3cup/80ml stock or enough to cook pasta. You're looking for it to be al dente though (still a teeny bit hard).
Once the sauce has thickened and the pasta is cooked, add back in your bacon with 2 tbsp finely diced parsley and 1/2cup/40 freshly grated parmesan. Give it a final stir then serve up!

Four Cheese Pasta | Serves 4
????INGREDIENTS????
14oz / 400g Mezzi Rigatoni (or other short cut pasta)
1/2 cup / 125ml Milk
1/2 cup / 125ml Heavy/Double Cream
3oz / 80g Taleggio, diced into cubes (see notes)
1.75oz / 50g Gorgonzola, diced into cubes
1/2 cup / 50g Gruyere, grated
1/2 cup / 40g Parmigiano Reggiano, finely grated
1/4 tsp EACH Nutmeg, White (or black) Pepper, Salt (or to taste)
????METHOD????
Pop your pasta in heavily salted boiling water and cook until al dente. Just before draining, retain a cup of starchy pasta water.
In a large deep pan over low-medium heat stir together milk and cream until combined. Add in your Taleggio and Gorgonzola cubes and gently stir until melted. Continue stirring until the sauce begins to thicken.
Add in your Gruyere and Parmigiano and stir until fully blended. Season the sauce with nutmeg, salt and pepper (to taste).
Add in your pasta and stir to combine. The sauce should be light, silky and attach nicely to the pasta. If you over reduce the sauce, use your starchy pasta water to thin out as needed. If your sauce is still too thin, just keep it on a gentle simmer and stir until it coats the pasta.
Serve up and enjoy!
