Vegan snack ideas:
Roasted spiced chickpeas:
Ingredients:
-2 cans of washed drained chickpeas
-1 tsp paprika
-1/2 tsp smoked paprika
-1 tsp ground cumin
-1 tsp celery salt
-1 tsp olive oil
-A pinch of salt
method:
-Dry chickpeas with kitchen towel and remove loose skins
-Drizzle olive oil and coat the chickpeas well
-Cover with spices and mix well
-Place in a non preheated oven for around 40 mins, set to gas mark 7/220c/425f and stir every 10 mins
-Every oven is different, you may have to adjust cooking times and temperatures to achieve best results
-After around 40 mins, switch off oven and leave chickpeas inside oven to cool completely before taking out and storing
-Add a pinch of sea salt to season and serve
Celery sticks with almond butter and dates:
Ingredients:
-3-4 sticks of celery
-1/3-1/2 cup of almond butter
-6-8 medjool dates
Method:
-Wash celery and remove any fibres
-Top and tail then cut into 2 pieces
-Remove date stones and cut into pieces
-Fill groove with almond butter
-Top with date pieces
Chia pudding:
Ingredients:
-1 tbsp dessicated coconut
-1 tbsp cacao powder
-15g chia seeds
-1 small/medium banana
-Plant based milk to fill a medium sized jam jar
(ingredients will vary on your preferences and the size of jam jar you use)
Method:
-Mix coconut, cacao and chia seeds in jam jar
-Finely slice banana into jam jar and mix once again
-Add plant based milk to jam jar, replace lid and mix thoroughly
-place in fridge for a few hours before eating

Spaghetti aglio e olio is a traditional Italian pasta dish. It is the simplest and most basic of all pasta. So watch and learn how to make Spaghetti aglio E olio at home with chef Ruchi Bharani only on Rajshri Food.
Ingredients
3-4 tbsp of extra virgin olive oil
6 cloves of garlic
2 tbsp of pine nuts
8 sliced button mushrooms
retained pasta water
1 tsp of chilli flakes
150 gms of boiled spaghetti
salt to taste
2 tbsp of parsley
crushed black pepper
few shavings of Parmesan cheese
Method
- Heat olive oil in a pan for 10 seconds
- Add sliced garlic and mix it properly and let it cook on low flame.
- Add pine nuts before the garlic turns brown
- Add sliced mushrooms and let them cook for 2 minutes
- Add pasta water, chilli flakes and give it stir
- Add the boiled spaghetti and salt to taste and toss the spaghetti in the garlic oil.
- Turn off the flame and add finely chopped parsley, crushed black pepper and toss it well
- Spaghetti Aglio E Olio is ready to be served.
- Grate some Parmesan cheese over the Spaghetti Aglio E Olio.

Ingredients:
- 1 box of Edamame Spaghetti
- 1 bunch of fresh Italian Parsley (Curled Parsley works as well)
- 2 peeled garlic cloves
- 1 tsp of salt
- 1 tsp of black pepper
- Red pepper flakes (optional in pesto sauce & for garnish)
- 1 cup of olive oil (another 1/3 cup of olive oil or water as needed)
- ¼ cup of pine nuts
- ½ cup or 1 cup of sliced grape tomatoes. 1 cup is if you really like tomatoes! ????
- ½ cup of roughly chopped artichokes
- ¼ cup of sun-dried tomatoes
- 1-2 tbsp of capers (optional if you like a saltier taste)
- Lemon (garnish)
- Italian parsley (garnish)
Instructions:
1. To save time, boil a pot of water filled halfway on medium high before making the pesto sauce.
2. In a blender, add the parsley, olive oil, garlic, pine nuts and salt. Blend together and add a little olive oil or water as needed until the sauce has a smooth consistency.
3. Set aside the sauce.
4. Add olive oil and salt to the boiling water, add the whole box of edamame spaghetti and cook for about 3-4 minutes. The pasta tastes the best when cooked al dente (a little chewy taste).
5. Once the pasta is ready, drain in a colander and rinse with cold water to stop the cooking.
6. Add the pesto sauce in the same pot we used for cooking the pasta and stir for about 5 minutes on medium low heat.
7. Then add the grape tomatoes, artichokes, sun dried tomatoes, black pepper, red pepper flakes (optional if you like a little kick!) and capers (optional if you like a saltier taste).
8. Add the pasta back in the pot and mix everything all together until the pasta soaked up some of the sauce.
9. Garnish with roughly chopped Italian parsley.
10. Ready to serve!
