How To make Fish and Potato Platter
8 oz Plain non-fat yogurt
1/4 c Chopped fresh dill
2 tb Rice vinegar
2 tb Chopped chives
1/2 ts Salt
1/2 ts Pepper
3/4 lb Small red potatoes, sliced
1 lb Salmon filets, cut in pieces
1 c Broccoli florets
2 tb Lemon juice
Combine first 6 ingredients in a small bowl; cover and chill. overlap potato slices around edge of a round 12 inch platter. Cover and microwave at high for 3 minutes. Uncover and place fish in a ring inside potatoes with pieces end to end. Mound broccoli in center of platter. Sprinkle fish and potatoes with lemon juice; cover. Microwave at high 8 minutes or until fish is cooked through and potatoes are tender, giving dish a half-turn at 4 minute intervals. Serve with a dill sauce.

FISHERMAN'S PLATTER: CATFISH SHRIMP MINI CRABCAKES HUSH PUPPIES LOADED MASHED POTATOES
Ingredients:
Mini Crab Cakes:
1 lb Jumbo Lump crabmeat
1/3 cup mayo
1 egg
2 tbs finely chopped parsley
1 tbs yellow mustard (or Dijon - I prefer the flavor of yellow)
2 tsp Worcestershire sauce
1.5 tsp Old Bay seasoning
16-18 butter crackers crushed
Catfish:
1.5 - 2lbs catfish fillets (lightly salt each fillet)
1 cup fine cornmeal
1/4 cup plain flour
1 tbs baking powder
1 tbs salt
1/2 tbs paprika
1/2 tbs garlic powder
1/2 tbs cayenne pepper
1 tsp black pepper
3-4 eggs
Shrimp:
1 lb Shrimp (size 13/15)
1/4 cup plain flour
1/2 - 1 tsp Old Bay seasoning
1/2 tsp garlic powder
2 eggs
2 pkts (sleeves) butter crackers crushed finely
Hush puppies (shut-up puppies lol):
1 cup Self-Rising Flour
1 cup fine cornmeal
1 cup buttermilk
1/3 cup sugar
1/3 chopped yellow onion
1/3 cup chopped green onion
1 tsp garlic power
1/2 tsp cayenne pepper (optional)
1 egg
Loaded Mashed Potatoes:
3 russet potatoes
milk
3 tbs butter
1 tsp salt
4 - 5 slices chopped bacon
green onion
favorite cheese(s)
Homemade Tarter Sauce:
1 cup mayo
1/2 cup sweet relish
1/4 cup small yellow onion chopped
2 tsp fresh lemon juice
Other:
Corn on the cob
parsley to garnish
Peanut oil for frying
**If you'd just like loaded potatoes INSTEAD of mashed, omit the milk and stir in the other ingredients. Dont mash. (Or simply have french fries which is typical with this meal)

Ingredients
500 gms fish
1 tbspoon chat masala
Kashmiri chilli powder 1 tbspoon
Coriander powder 1 tbspoon
Chopped green corriander 1 tbspoon
Roasted cumin crushed 1 tbspoon
Salt 1 teaspoon
1/2 teaspoon black pepper
1/2 teaspoon turmeric pwdr
Take a bowl and add all the above stated spices in it. Add ginger and garlic paste 1 tbspoon each in the bowl, also add 1 tbspoon of green chilli paste and squeeze two lemon in the bowl and mix well. Now add the fish in the bowl and apply the spices well and leave for 60 minutes to marinate.
Now take a pan and pour 5 tbspoon oil, place it on the burner and let the oil become hot.
Fry the marinated fish one side for 5 minutes, see when fried turn the fish pieces and fry for 5 minutes as well. Dish out as shown.
Now fry already cut potato slices in the frying pan. Before adding potatoes to the 2 tbspoon hot oil in the pan, add 1 teaspoon zeera and 1/2 teaspoon turmeric pwdr and slightly cook. Now you can add potatoes and cook. Add 2 to 3 nos green chilli and sprinkle 1/2 teaspoon salt and close the lid for about 5 minutes or until the potato is cooked well. This is done on a medium flame. Dish out and sprinkle chopped green corriander and potatoes are done.
Chatni ( sauce) Recipe
Green mint leaves 1 cup
3 to 4 garlic cloves
1 teaspoon salt
Green coriander leaves 1 cup
Chilli flakes 1 tbspoon
1/4 teaspoon black salt
3/4 cup tamarind (imli) pulp
Water as per requirement
Grand all the above stated ingredients in a blender and your sauce ( chatni) is ready
Cook white rice with spices as per taste. Also you can add fresh vegetables like carrots and green peas like I have done.
Now you present all the delicacies in a big platter in the best possible manner.
