Hey guys! Hopefully you all had a great weekend. Well here we are Monday again, in Chicago it is snowing again ugh snow! lol Well today's recipe I am just going to be silly and have a little fun and make a cook Chicken Parmesan Calzone! This is a fun and simple recipe that you can tweak the cheeses on to make it YOUR style of chicken parmesan. This is a cool little baked dinner, or lunch that everyone in the whole family will fall in love with. Go ahead and thrown down and make this one. Total Time: 45 Minutes
Makes: 4 Servings
1 Refrigerated Pizza Dough
6 Chicken Tenders, Cooked and Chopped
8 oz. Mozzarella Cheese, Shredded
1/2 Cup Parmesan Cheese
3/4 Cup Pizza Sauce
2 Tbsp. Butter, Melted

Emeril's Kicked-Up Calzones-Al-Forno
Serves 4
Ingredients
2 cups crushed tomatoes
2 tbsp. olive oil
salt, to taste
black pepper, to taste
2⁄3 cup Kalamata olives, pitted & coarsely chopped
½ lb mozzarella, cut into ½-in. cubes
½ lb ricotta, drained
¼ cup grated Parmesan
1 cup cooked sausage pieces, such as chorizo or Italian sausage
½ cup chopped fresh basil
1 lb Semolina Pizza Dough
Directions
1. Combine the tomatoes, olive oil, salt, and black pepper in the bowl
of a food processor. Process until smooth and then reserve half of the
sauce in a small bowl.
2. Combine the olives, mozzarella cubes, ricotta, Parmesan, sausage,
and basil in a small bowl and mix well.
3. Divide the pizza dough into four equal portions. Lightly dust a work
surface with flour. Turn the dough out onto the work surface and roll
each dough portion into 8-in. rounds.
4. Spread one quarter of the tomato sauce over the bottom half of each
dough round, leaving a 1-in. space around the edges. Divide the olive
and cheese mixture evenly between the dough rounds. Gently fold
the top half of the dough over the filling, rolling and pressing the edges
together with your fingertips to seal. Crimp the edges as you go along.
Cut a slit in the top of each calzone.
5. Place two calzones on the Crisper Tray. Slide the Crisper Tray into
Shelf Position 2. Select the Bake setting. Set the cooking temperature
to 400° F/205° C and set the cooking time to 20 mins. Press the Start
Button to begin the cooking cycle. When the first batch of calzones
are done cooking, repeat the cooking process with the second batch.
6. Serve the calzones with the reserved sauce in the bowl for dipping.

Mini Pizzas with Hot Sausage Recipe
Serves: 4
Ingredient:
1 lb Semolina Pizza Dough
3½ cups Quick Tomato Sauce
1½ lb hot Italian sausage, casings removed & meat crumbled
8 oz mozzarella, grated
2 tbsp. chopped fresh thyme leaves
½ tsp. crushed red pepper
¼ cup finely grated Parmigiano-Reggiano extra-virgin olive oil, for
drizzling (optional)
Directions:
1. Divide the dough into four equal portions. Lightly dust a work surface
with flour. Turn the dough out onto the work surface and roll each
dough portion into an 8-in. round.
2. Place the sausage on the Crisper Tray. Slide the Crisper Tray into Shelf
Position 2. Select the Airfry setting (400° F/205° C). Set the cooking
time to 15 mins. Press the Start Button to begin the cooking cycle.
3. Transfer one dough portion to the Crisper Tray. Spoon one quarter
of the tomato sauce evenly over the dough. Sprinkle one quarter
of the mozzarella evenly over the sauce. Top the mozzarella with one
quarter of the sausage. Garnish with the thyme, crushed red pepper,
and Parmigiano-Reggiano.
4. Slide the Crisper Tray into Shelf Position 2. Select the Pizza setting
(375° F/191° C) and cook for 15 minutes. If you want a crispier, well
done pizza, increase the time by 4–5 minutes. When the first pizza
is done cooking, repeat the cooking process with the rest of the pizzas.
5. Serve the pizzas drizzled with the extra virgin olive oil if desired.

PERFECT PIZZA DOUGH RECIPE
This versatile recipe works for pizza, calzone, stromboli . . . any number of Italian dishes. But it's also good for meat pies and the like. There is a recipe for a to die for 3 cheese chicken & spinach pizza at:
What you'll need:
1 cup lukewarm water
1 package dry quick-acting yeast
1 teaspoon sugar
1 teaspoon salt
2 cups all-purpose (plain) flour, sifted before measuring
2 tablespoons fat (shortening if you have it), melted
1 1/4 cups all-purpose (plain) flour, sifted before being measured
Directions:
Place water in mixing bowl.
Sprinkle yeast on water
Sift sugar, salt and 2 cups of flour together and beat into water and yeast
Add fat and stir vigorously
Stir in remaining flour and knead until smooth
place in a well-greased bowl
cover and place in warm spot
let dough rise until about double in bulk (about 45 minutes)
Punch down
Makes 1 12-inch pizza or 2 calzones.
