How To make Elvis Presley's Sweet Potato Pie
2 small Sweet potatoes
3/4 pound
1 medium Russet potatoes :
baking type
1/2 cup Butter
1 cup Brown sugar packed
1/2 teaspoon Nutmeg; fresh :
grated
3 large Eggs beaten
1 1/4 cups Evaporated milk
1/2 teaspoon Vanilla extract
1 9" Pie crust :
unbaked
Place all of the well-scrubbed potatoes in a 3-quart saucepan. Cover with cold water and bring to a boil over high heat. Reduce heat to a simmer and cook until potatoes are very soft, about 20-30 minutes. Drain and when cool enough to handle, peel. In medium bowl, combine potatoes, butter, brown sugar and nutmeg. Using a potato masher, cream the potatotes until very smooth. In small bowl, beat eggs, 1 cup evaporated milk and vanilla together. Beat this mixture into the potatoes. Mix thoroughly. Pour into piecrust and drizzle the remaining 1/4 cup of milk on top. Bake 15 minutes in a preheated 450~ oven then turn heat to 325~ and continue baking for 30 minutes or more until the filling is set.

3 1/2 T. Baking powder
1 t. Salt
2 t. sugar
6 T. cold butter
3/4 c. buttermilk
3/4 c. smashed cooked sweet potato
can add a little cinnamon
brush with 1 beaten egg yolk and 1 t. water
350 40 minutes

Sweet Potato Pie with Michael's Home Cooking
This Sweet Potato Pie is best served room temperature or you can serve cold. A great holiday dessert.
Ingredients:
3 or 4 sweet potatoes (about 2 pounds)
4 eggs
1 egg yolk
2 cups packed brown sugar
1/2 cup heavy cream
1/4 cup melted butter (4 ounces)
2 teaspoons vanilla extract
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon salt
Pecan Topping:
3/4 cup all purpose flour
1/2 cup chopped pecans
1/4 cup packed brown sugar
6 Tablespoons melted butter
1/4 teaspoon cinnamon
1/4 teaspoon salt
This recipe can make two pies, I made one pie using a 10 inch pie plate that was deep dish. This was the first time I made this as I got it out of a magazine and I think I should have baked it about 15 minutes longer. I covered the pie the last half of baking so that it would not get too dark.
I baked for one hour @ 350F
If you are making two pies with this recipe, I think the one hour baking time would be perfect.
Of course, I had to bake my raw sweet potatoes in the oven for an hour @ 375F
I baked 4 potatoes and had to use 3 of them for the filling.
