My Chocolate Orange Yule Log - IMPRESS THE GUESTS!
This is a great one to set on the table at Christmas and also a super way to practice making a Swiss Roll if you have never made one before! It really does not make (too much) if you mess up as the sponge will be covered in a luscious ganache!
Made with a classic 10:10:1 ganache, a 25:25:1 Swiss Roll sponge (* see bottom of recipe for explanations) and a 2:1 orange buttercream.
INGREDIENTS
CHOCOLATE GANACHE
300ml Double cream
30g Unsalted Butter
300g Dark chocolate
SPONGE
4 Large eggs at room temperature
100g Caster sugar
65g Self-raising flour
40g Cocoa powder
1 Orange, zest only
ORANGE BUTTERCREAM
75g Softened Butter
150g Icing sugar
1tsp Orange essence
1TBSP Milk
Orange food colouring
METHOD
Pre-heat the oven to 160°C
Line a Swiss Roll tray with baking parchment
GANACHE
Heat the double cream and butter so that the butter just melts
Add the dark chocolate and stir it in to make a runny chocolatey mix
Set aside to cool
SPONGE
Whisk the eggs and sugar together and add the orange zest. Mix for a further minute
Gently fold in the sifted flour and cocoa powder in three stages
Fold gently and so as not to lose too much of the volume
Pour the mix onto the tray and spread around gently using a palette knife
Bake for 10 minutes, or until the centre lightly springs back when pressed
Remove from the oven and tip onto a clean sheet of baking paper
Remove the backing paper from the sponge and roll up the sponge in the new baking paper
Leave to cool completely
ORANGE CREAM
Mix the butter, icing sugar, orange essence, milk and orange food colouring together until smooth and creamlike
BUILD
Unroll the sponge and evenly spread the buttercream over it
Re-roll the sponge and place it onto a plate or tray. If you are messy like me - line the plate with paper first!
Spread the ganache over the sponge and use a fork to create a log pattern
Dust with icing sugar and decorate with sugar pearls or other Christmassy ornaments
* I remember many of my mixes by numbers:
Sponge: 4:4:4 = weigh four 4-day old eggs in their shells and use the same weight for all 4 ingredients: Eggs, flour, sugar, butter
Ganache: 10:10:1 = for every 10g of chocolate use 10g of double cream and 1g of either butter, coffee or sugar
Swiss roll: 25:25:1 = for every 25g of sugar use 25g of SR flour (or flour+cocoa) and 1 egg
Buttercream: 2:1 + = 2 parts icing sugar to 1 part butter + a splash of liquid
How do you think they remember it all on Bake Off!!
