* ~ COFFEE WALNUT CHOCOLATE CHIP COOKIES RECIPE ~ *
INGREDIENTS:
- 125g (8 ½ tbsp) softened butter
- 100g (½ cup) soft dark brown sugar, or raw cane sugar
- 100g (½ cup) caster sugar
- 2 tsp vanilla extract or paste
- 1 large egg
- 1 large egg yolk
- 2 shots of espresso, or 1 tbsp of granulated coffee mixed into 2 tbsp boiling water
- 275g (2 cups) plain or ’00’ flour
- 1 tsp bicarbonate of soda
- ½ tsp salt
- 100g (3 ½ oz) chopped walnuts
- 100g (3 ½ oz) milk chocolate chips or chunks
INSTRUCTIONS:
1) In a large bowl, beat together the butter, sugars, and vanilla until just combined.
2) Add the egg and egg yolk one at a time, beating thoroughly between each addition until well incorporated.
3) Beat the espresso/coffee into the mixture until relatively smooth.
4) Tip the flour, bicarbonate of soda, and salt into the bowl, stirring until you have a stodgy dough.
5) Stir through the chopped nuts and chocolate bits until nicely laced throughout the dough.
6) Place the bowl of dough in the fridge to chill for at least 1 hour (or anywhere up to 48 hours!). This allows them to hold their shape better and come out nice and thick and chewy.
7) Preheat your oven – 190°C / 170°C fan / 375°F / gas mark 5.
8) Line 2-3 baking trays with greaseproof paper.
9) Roll lumps of dough into round balls and place onto your prepared trays, you should get 14-16 balls of dough.
10) Bake on their trays for 12-15 minutes until they look dry on top. They may seem underdone but they will firm up as they cool!
11) Cool the cookies on their tray for 10 minutes before cooling completely on wire racks.
12) Enjoy!

RECIPE:
2 1/4 cups all-purpose flour
1/2 cup rolled oats, ground into flour
1 1/4 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon cinnamon
1 cup (2 sticks) unsalted butter, melted
3/4 cup packed light brown sugar
3/4 cup sugar
1/2 tablespoon vanilla extract
1/2 teaspoon lemon juice
2 large eggs, room temperature
3 cups semi-sweet chocolate chips
1 cup walnuts, chopped
In a separate bowl combine dry ingredients and whisk everything together until combined.
In a mixing bowl, whisk melted butter together with both brown and granulated sugar until fully incorporated, then mix in eggs, lemon juice and vanilla extract.
Once smooth, stir in dry ingredients, being careful not to over-mix, then fold in chocolate chips and walnuts.
Scoop 2-3 tablespoons cookie dough (golf ball size) onto parchment-lined baking sheets and chill for at least 2 hours or up to 24 hours.
Remove from fridge, gently flatten cookies with your palm. Put back in the fridge until the oven comes up to temperature.
Preheat oven to 350º F and space cookies out on baking sheet so they’re at least 1 1/2 inches apart. (If the cookies are not chilled enough they will spread much more than desired).
Place baking sheets in oven and bake for 8-12 minutes (if on the smaller side; 5-8 minutes if smaller), or until golden. They should still be soft in the centers.
Remove from oven and let cool at least 10 minutes before serving. Enjoy!

RECIPE
1/3 cup vegan margarine
1/3 cup organic sugar
1 tsp. vanilla extract
1 cup finely ground walnuts
1 1/4 cup all-purpose flour
1/2 tsp. ground nutmeg
1/4 tsp. ground cinnamon
1/4 tsp. salt
1/2 cup organic powdered sugar
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add vegan margarine, and sugar. Stir well. Add vanilla extract, and ground walnuts. Stir well. Add flour, nutmeg, cinnamon, and salt. Stir until a dough forms. Shape the dough into small crescents, and place on a baking pan lined with parchment paper. Bake 12-15 minutes. Let the cookies cool for a few minutes on the pan, but when they are still slightly warm, roll in powdered sugar until evenly coated. Make 2 dozen cookies.
