How To make Dipped Peanut Butter Sandwich Cookies
1/2 cup Creamy peanut butter
4 ounces Ritz crackers -- 1 sleive-see
1 cup White chocolate chips
or
Semisweet chocolate chips :
o Milk chocolate chips 1 tablespoon Shortening
2:00 Note: 1 sleeve (4 ounces) round butter-flavored crackers Spread peanut butter on half of the crackers; top with remaining crackers t make sandwiches. Refrigerate. In a double boiler over simmering water melt choice of chocolate chips and shortening, stirring until smooth. Dip sandwiches and place on waxed paper until chocolate hardens. Yield 1 1/2 do Shown in a bowl, lined with linen napkain, part chocolate dipped, part whit chocolate dipped.

Easy Chocolate Covered RITZ CRACKERS with Peanut Butter | Ritz Cracker Cookies
How to make chocolate peanut butter Ritz cracker cookies with 3 ingredients!

Make chocolate peanut butter Ritz cookies with me. These chocolate covered peanut butter crackers are the perfect treat for a morning full of crafting, and that's exactly what we're doing, snacking and crafting together! I love how easy these chocolate Ritz crackers are to make too... You can literally make them in minutes!

INGREDIENTS:
3 sleeves Ritz crackers
1 cup creamy peanut butter
15-20 ounces dark chocolate melting wafers
INSTRUCTIONS:
1. Put a sheet of wax paper on your cookie sheet.
2. Use your knife to spread peanut butter between two Ritz Crackers, sandwiching the crackers together.
3. Set all your peanut butter cracker sandwiches on the wax paper covered cookie sheet, in preparation for dipping.
4. Melt the chocolate according to package directions.* I like to go the easy route, using my large glass measuring cup and melting the wafers in the microwave.*
5. Once the chocolate is melted, dip each cracker sandwich in the melted chocolate, using the forks or tongs. Shake any excess chocolate off before placing back on the wax paper to dry.
6. When all your crackers have been dipped, chill them in the freezer for about 15 to 20 minutes.
7. Remove from the freezer and place in an airtight container or holiday tin. Store them in a cool place; I usually just stick them in the fridge.
*Depending on the type of chocolate used (chocolate almond bark, candy melts, or chocolate chips), some people like to use shortening or paraffin wax, adding it into their chocolate as it melts. This allows for a thinner coat and stretches the chocolate a little further. But if you use a good quality chocolate, you likely won’t need that extra step. I started using Ghirardelli Dark Melting Wafers a few years ago, and I love them so much better than almond bark. They’re so much easier to work with, and they have fantastic flavor.
*You can also melt the chocolate using a double boiler on the stove. This is basically a pan inside of another pan with boiling water in the bottom pan. It allows for more even melting without burning, and it also keeps the chocolate warm for dipping.
