3 Dozen Hard Boiled Eggs
- 2 lg Bunches Fresh Dill, roughly
-chopped 2 lg Jars, Generic Dill Spears
- 2 lg Yellow Onions, sliced into
-rings 1 lg Green Pepper, sliced into
-rings 2 lg Sweet Red Peppers, sliced
-into rings 1 qt Cider Vinegar
1 qt Bottled Water
-Spring Water> 1 sm Handful Whole Cloves
Drain pickle juice into large pan. Add cider, water, cloves and dill. Bring liquid mixture to full boil; then reduce heat to simmer for 45 minutes to one hour Place eggs, vegetable slices and pickle spears into large glass or hard plastic container . Strain liquid mixture through a pasta collander and pour liquid over eggs and vegetables. Let sit for 24-36 hours at >>room temperature<< The eggs will be a very, very bright yellow and have a wonderful dill flavor the whole way through. The vegetables and pickles will have a dill flavor never before experienced -- and can be eaten separately or used as a complimentary garnish.

2 cups Apple Cider Vinegar
2 cups Beet Juice
2/3 cup Sugar
2 tsp Salt

1 TBSP Salt
1 TBSP Black Peppercorns
4-5 Hot Peppers
2 TBSP Red Pepper Flakes
2 TBSP Pickling Spice
5-6 Cloves Garlic
Golden Turmeric Pickled Eggs

1 cup Water
1 cup White Vinegar
1 tsp salt
1 TBSP Black Peppercorns
1 inch Piece of Fresh Ginger
2 tsp Turmeric
1 tsp Cayenne
6 Cloves Garlic
1/2 red onion Sliced

Dill Pickled Eggs
INGREDIENTS
6 hard boiled eggs (easy peel video
1 ½ cup water
½ cup apple cider vinegar
1 clove garlic, crushed
½ tsp pickling salt, or kosher salt
1 tsp sugar
1 tbsp pickling spice
4-5 sprigs of fresh dill
1 thick slice of purple onion, halved
TOOLS

INSTRUCTIONS
1. Brink the water and vinegar to a simmer then turn off the heat.
2. Add the garlic, salt and sugar. Remove the pot from the burner to cool.
3. Begin layering onion, 2 eggs, then dill. Repeat until finished.
4. Add in the pickling spice.
5. Pour the cooled water mixture over the eggs.

Pickled Dill Eggs ! ! !
As we continue into the adventures of pickling, I decided to use some of the left over eggs from the Spicy Pickling Series and make a jar of pickled Dill eggs.
I also make a couple jars of spear pickles and chip/slicer pickles.

My Award winning pickled eggs are easy to make and super yummy with beer. I won Blue ribbons 2 different years for my eggs and Jerky...Yep...Local county fair. Also don't forget the 1/2 fresh squeezed lime per quart. Forgot in video but it's in the description. The Lime takes these eggs to the MOON. Ready to eat in 24 hours and by 48 hours.
The 4 day thing is for the Unwashed Farm Fresh eggs we use. Eggs straight from a chicken are hard to peel so they need to sit a few days so the egg's sulphur can soften the shell a bit. Store bought eggs can be used immediately and should be kept cold. Unwashed Farm Fresh eggs have a natural bloom coating allowing them to be stored at room temperature for weeks.
This recipe is NOT meant for long term storage like traditional canning methods. Store them a couple days at room temp...or put them in the refrigerator for a week or so. Still tastes good...just a little rubbery.
My eggs are great beer snacks food that make horrible farts with good hang time. Perfect for the car! In our house a quart doesn't last two days. Our downtown pool hall has a 2 gallon jar of pickled eggs on the counter and I know for a fact they are 6 Months Old. They got that Jar in December and it's now May 12 with a couple dozen remaining to sell. The pool hall eggs sit at the bottom in cloudy flat vinegar right next to the Jars of Turkey Gizzards and Pigs Feet. All sitting on the counter NOT refrigerated. Those Three delicacies are self service with metal tongs hanging on a hook.
We Midwest folks (including Texas) love our traditional Cowboy food. We fight over who's first in line at our Lions Club Mountain Oyster feast. All you can Eat $12 with Pig and Cow testicales served with hot pickles and white bread.

1½ cups white vinegar
1 cup water
¾ teaspoon dill weed
¼ teaspoon white pepper
3 teaspoons salt
¼ teaspoon mustard seed
½ teaspoon onion juice or minced onion

1 can (12 oz.) unsweetened pineapple juice*

*If sweetened pineapple juice is used, omit sugar
