How To make Dessert Bar Apple Cherry Pie
10 oz Frozen tart red cherries; pi
1 c Granulated sugar
3 tb Tapioca; quick-cooking
4 c Cooking apples; 2 pounds
--peeled, thinly sliced 2 tb Butter or margarine
Milk 2 ts Granulated sugar
1/8 ts Ground nutmeg
Pastry: 2 c All-purpose flour
1/2 ts Salt
2/3 c Shortening
6 tb Cold water; to 7 tablespoons
Recipe by: Midwest Living, October 1995 Filling: Thaw the frozen cherries; do not drain off the juice. In a large mixing bowl, combine 1 cup sugar and the tapioca. Add the undrained cherries and the apples, tossing to coat. Let stand for 20 minutes, stirring occasionally. Pastry: Preheat the oven to 375 degrees. In a mixing bowl, stir together the flour and salt. Cut in the shortening until the pieces are the size of small peas. Sprinkle the water, one tablespoon at a time, over part of the flour; toss gently with a fork. Push to the side of the bowl. Repeat until all is moistened. Divide the dough in half. Form each half into a ball. For the bottom crust, on a lightly floured surface, flatten one ball of dough and roll into a 12-inch circle. Line a 9-inch pie plate with the pastry. Trim the pastry to the edge of the pie plate. Roll out the remaining pastry for the top crust; cut into strips for a lattice crust or cut slits for the steam to escape. Spoon the filling into the pie crust; dot with the butter or margarine. Add the top crust, trimming 1-inch beyond the edge of the pie plate. Fold until the edge. Seal and flute. Brush the top crust with milk. Sprinkle with 2 teaspoons sugar and the nutmeg. Cover the edge of the pie with foil to prevent overbrowning. Bake for 25 minutes. Remove the foil and return to the oven for 20 to 25 minutes more, or until the crust is golden and the filling is bubbly. Cool on a wire rack. Serve with ice cream, if you like. Cut out the center portion of the foil, making a 7 1/2-inch circle. Unfold and loosely mold the foil rim over the edge of the pie, leaving the center open. -----

Hi, Kristi in the Rada Cutlery Kitchen, and today I want to show you a recipe for heavenly cherry bars.
First, preheat your oven to 350 degrees. In a large bowl, combine 1 cup softened butter and 2 cups sugar until fluffy. Add 4 large eggs one at a time, beating after you add each egg. Add and beat 1 teaspoon of vanilla extract. Gradually add 3 cups flour and 1 teaspoon of salt.
Spread ¾’s of the dough into a greased baking pan. Spread with a can of cherry pie filling. Drop remaining dough by teaspoonful’s into the filling. Bake 30 to 35 minutes or until golden brown. Cool completely on a wire rack.
To make the glaze, combine 1 cup confectioner’s sugar, 1 teaspoon vanilla extract, and 2 tablespoons of milk. Drizzle the glaze over the bars.

Ingredients
2 packages refrigerated pie dough
1 cup cherry pie filling
1 egg beaten, optional
Instructions
Preheat oven to 400°F. Line a 8-9 inch round cake pan with parchment paper.
On a work surface, roll out the pie dough.
Using a 2-inch round cookie cutter (or similarly sized water glass), cut as many circles as possible from the dough. Repeat for second pie dough.
Pick up one circle and pinch the ends together to make a boat shape. Spoon in one cherry from the pie filling, and place into the cake pan facing up.
Repeat for the remaining circles until the pan is full.
Brush with optional beaten egg, and then bake for 12-15 minutes until the edges turn golden.
Serve in the pan, or use a spatula to get beneath the parchment and lift the pie up onto a serving plate

Easy Cherry Pie Bars start with a soft homemade almond crust that's layered with cherry pie filling and topped with more crust. So much easier than a pie, but just a delicious.

INGREDIENTS
1 c. butter softened

1 tsp vanilla extract
1/4 tsp almond extract
3 c. flour
1 tsp salt
2 cans 21 ounce cherry pie filling
Glaze
1 c. powdered sugar
1/2 tsp vanilla extract
1/2 tsp almond extract
2 Tbsp milk
INSTRUCTIONS
Preheat oven to 350°.
Cream butter, sugar and salt until light and fluffy in a large bowl using a hand mixer or stand mixer.
Add eggs, one at a time, beating well after each addition. Beat in extracts. Add salt and mix until combined. Gradually add flour while mixing.
Spread 3 cups dough into a greased 15x10x1-in. baking pan. Spread with pie filling.
Drop remaining dough by teaspoonfuls over filling. Bake 45-60 minutes or until golden brown.
Cool completely in pan.
In a small bowl, mix confectioners’ sugar, extracts and enough milk to reach desired consistency; drizzle over top.
NOTES
What is a jelly roll pan?
A jelly roll pan is a large, shallow baking pan that is perfect for making slab pies, bars, and jelly rolls. The size I use is 15×10″. I use it to make many of my dessert bars!
What other kind of pie filling can I use?
Apple, blueberry, peach, and strawberry pie filling will work, too!
How long do the pie bars keep?
Any leftover bars should be kept in the refrigerator in an airtight container. They will keep for up to five days.
I don’t like almond flavor – can I use something else?
Just omit it and increase the amount of vanilla extract instead.
