Pinwheel Date Cookies! - 300 Subsciber Special
This recipe was provided by my great-grandmother Watkins.
Pinwheel Date Cookies
Dough:
- Cream 1c of butter, add 1c white sugar and 1c brown sugar gradually while continuing to beat at medium speed.
- Add 2 eggs, beat well.
- Combine 4c of flour, 1 tsp of baking soda, and 1/2 tsp of salt; gradually add to creamed mixture, mixing well.
- Shape dough into 3 balls.
- Chill for one hour.
Filling:
- Combine 16 oz of whole pitted dates (8 oz dates and 8 oz figs in my case), 1/2c sugar, 2/3c water, 1/8 tsp salt in a pot or large enough pan.
- Cook over medium heat (or gentle boil), continually stirring, until the mixture thickens into almost a paste as it will solidify more once cool.
- Yields 2.5c of filling.
Combine:
- Place each dough ball onto a lightly floured surface; roll into 10x12 inch sheets but not too thin. (Ours were closer to 8x10 in. and it still almost tore.)
- Spread 1/3 filling over each rectangle leaving 1/2 inch margins on all sides.
- Starting on the long side, roll up the sheet. Pinch the seams and ends of the roll to seal.
- Cover rolls in wax paper and freeze. Yes, freeze it solid. Yes, this is far too long to wait for cookies. :'(
- Uncover rolls and cut into 1/4 inch slices.
- Place 1 inch apart on greased cookie sheets.
- Bake at 350 F for 10-12 minutes.

Date Cookies
FOR THE DATES:
1 cup (175 grams) pitted and chopped dates
3/4 cups (177 grams) water
1/4 cup (50 grams) sugar
Place all the ingredients in a small pan. Stir constantly on medium heat until you have a thick paste, about 7 minutes. Remove fro m heat and cool down completely.
Preheat the oven at 350F (175 C) and line 2 baking sheets with silicon mats or parchment paper.
FOR THE DOUGH:
2 cups (256 grams) all-purpose flour
3/4 teaspoon (3 grams) baking soda
1/4 teaspoon (1.5 grams) salt
1/2 cup (113 grams) unsalted butter — softened
1 cup (200 grams) brown sugar
2 large eggs at room temperature
1/4 cup (56 grams) milk
1 teaspoon (4 grams) vanilla extract
Walnut pieces
Whisk the flour, baking soda and salt in a bowl for a couple of minutes.
In another bowl, cream the butter with the brown sugar. You can use a mixer for this is you like.
Add one of the eggs and mix in well. Add the second egg and do the same. Mix in the milk and the vanilla. Cream well.
Add the flour and mix until all the ingredients are incorporated. Do not over beat the dough.
Drop the dough on to the mat using a cookie scoop or a spoon.
Make a small dent in the middle and gently press in about 1/2 teaspoon of the cooled dates. Add a walnut piece.
Top the cookie with a doll-ip of dough. Spread out the dough to cover well.
Bake for 10 to 12 minutes, until the edges are lightly browned.
Remove from oven and allow cookies to cool on pan for a few minutes. Transfer them to a cooling rack.
Store in an airtight container for about a week.

These are an old-time favorite: a sweet date mixture is spread onto a slightly sweet dough and rolled into a beautiful pinwheel cookie. Fun, festive, and delicious! Merry baking! ????

INGREDIENTS
For the filling:
- 1/2 lb pitted dates
- 1/3 cup water
- 1/4 cup maple syrup
- 1 tbsp orange zest
- 1/4 cup orange juice
- 1/4 cup chopped, toasted walnuts
For the cookies:
- 1/2 cup butter
- 1/2 cup white sugar
- 1/2 cup brown sugar, firmly packed
- 1 egg
- 2 cups flour
- 1/2 tsp salt
- 1/4 tsp baking soda
INSTRUCTIONS
Chop the pitted dates into small pieces. Put dates in a saucepan along with the water, maple syrup, orange zest, and orange juice. Lightly boil for five minutes until the mixture is thick. Remove from heat and set aside to cool to room temperature. Once cool, stir in chopped walnuts.
In a mixer, combine the butter, white sugar, and brown sugar. Mix on medium until light and fluffy, 3-4 minutes.
Add one egg and mix to combine, 1 minute.
To the mixer, add the flour, salt, and baking soda. Mix until no dry streaks remain, 1-2 minutes. Put pastry dough in the refrigerator and chill slightly, minimum 1 hour.
Roll out dough on floured parchment paper to a roughly 12×14-inch rectangle.
Spoon the cooked and cooled date mixture on top of the dough. Spread evenly to all edges.
Use the parchment paper to slowly lift the dough and date mixture, rolling it like a jelly roll. Once rolled, place in the refrigerator until well chilled, 4-6 hours (or overnight).
Cut chilled dough into ¼-inch pieces with a sharp knife and place on a parchment-lined baking sheet. Bake 10-12 minutes at 375°F until golden.

How to make Date Pinwheels | Date Pinwheel Cookies
These are old fashioned date pinwheel cookies. Came from grandma and they are a special icebox cookie to make at Christmastime, but they were my grandma's favorite so we had them all the time.
8 oz pitted dates, chopped
1 C water
1/4 C sugar
2 tsp lemon juice
DOUGH
1 C butter, softened
2 C brown sugar
2 eggs
3 1/2 C flour
1/2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
In a saucepan combine dates, water, sugar, and lemon juice. Bring date mixture to a boil and simmer 10 minutes, stirring occasionally.
In a mixing bowl, cream butter and sugar and eggs. add dry ingredients and mix together. Divide dough into 3 equal parts and wrap each on in plastic wrap and chill until easy to handle.
Between sheets of parchment or wax paper roll each portion into a rectangle ( about 9x12) Spread 1/3 of date mixture over dough. Starting with the 12 inch side, lift edge of waxed paper. Peel off as dough is rolled, jelly roll fashion. Repeat with remaining portion and filling. Wrap rolls in parchment or waxed paper and refrigerate over night.
Preheat oven to 350°. Cut each roll into 1/4 slices and place about 1 apart on cookie sheet, Bake for 10-12 minutes- cool on racks.

I have been making this recipe for Date Filling for over 20 years. I have tweaked it over the years, but it’s basically the same. I know longer add the chopped walnuts due to medical issues I prefer the filling made with nuts but sometimes we have to compromise. Date Filling
1 1/2 cups dates, pitted and chopped
1/4 cup sugar
1/3 cup water
2 tablespoons brandy
1/4 cup chopped walnuts
pinch of salt
zest and juice from one orange, optional
In a small saucepan, combine all ingredients. Simmer over medium low and thick. Refrigerate until needed.
