How To make Date Pinwheel Cookies
1/2 c Shortening
1 c Dark brown sugar; firmly pac
-ked 1 Egg
2 c All-purpose flour
1/2 ts Baking soda
1/4 ts Salt
1 ts Ground cinnamon
Filling: 8 oz Whole pitted dates; chopped
1/2 c Sugar
1/4 c Water
1 c Pecans; finely chopped

Cream shortening; gradually add sugar, beating well at medium speed of an electric mixer. Add egg, and beat well. Combine flour, soda, salt, and cinnamon; gradually add to creamed mixture, mixing well. Shape dough into a ball. (Dough will be stiff.) Place dough on a lightly floured surface; roll into a 16- x 8-inch rectangle. Spread filling over dough, leaving a 1/2-inch margin on all sides. Starting at long side, carefully roll dough, jellyroll fashion; pinch seam and ends of roll to seal. Wrap dough in wax paper, and chill at least 1 hour. Unwrap roll, and cut into 1/4-inch slices. Place 1 inch apart on greased cookie sheets. Bake at 350 degrees for 12 to 15 minutes. FILLING Combine dates, sugar, and water in a medium saucepan. Cook over medium heat 3 to 5 minutes or until thickened, stirring constantly. Remove filling from heat; -----

Pinwheel cookies: beautiful and delicious!
INGREDIENTS
400g (3 1/3 cups) flour
7g (1 1/2 tsp) baking powder
1/2 tsp salt
220g (1 cup) butter
200g (1 cup) sugar
2 eggs
1 1/2 tsp vanilla extract
60g melted chocolate
METHOD
1. In the bowl mix together butter with sugar, add in eggs and vanilla extract, then add in flour, baking powder, and salt.
2. Divide the dough into two pieces and add melted butter to the second.
3. Roll out each dough and cover the white one with the dark one, wrap it, and refrigerate for 2 hours.
4. Cut it into slices and transfer it to the baking pan.
5. Bake at 190°C (375°F) for 12 minutes.

Holiday DATE NUT PINWHEEL Cookies
This is one of my mom's all time favorite Holiday Cookies. This Date Nut Pinwheel cookie made the Cookie trays. My mom used to make decorated boxes full of Christmas cookies and distribute them to everybody at school. Trust me that was a lot of boxes. I am one of 4 siblings and my mom was president of the PTA. Thinking back on it, she was pretty amazing!!!
She also made 25 fruit cake and shipped them out to all the family, but that is another story/video. Below are the ingredients for the Date Nut Pinwheels:
3/4 pound dates
1/3 cup white sugar
1/3 cup water
1/2 cup walnuts
1/2 cup butter
1 egg
1 cup brown packed brown sugar
1/2 tsp vanilla
1 and 3/4 cup flour
1/2 tsp baking Soda
1/4 tsp. salt

Kukis Kurma Spiral
Bahan A
43g mentega pilihan, suhu bilik
100g gula perang
1 telur (atau 1 sudu besar flaxseed + 1 sudu besar air)
Bahan B
120g tepung gandum
½ sudu kecil garam
Secubit soda bikarbonat
50g Jem kurma
Lenyekkan bahan A sehingga gebu. Masukkan telur dan gaul sebati.
Masukkan bahan B dan gaul sehingga mendapat doh lembut.
Biarkan rehat dalam peti sejuk untuk 30 min. Canaikan kepada bentuk segi empat tepat dengan ketebalan 1 inci.
Sapukan jem kurma. Gulungkan dan biarkan rehat dalam peti sejuk untuk 30 min.
Potong hirisan 1 cm dan bakarkan dalam ketuhar yang telah dipanaskan pada suhu 200C untuk 8-10 min.

Ingredient A
43g unsalted butter, room temperature
100g light brown sugar
1 egg ( or 1 tbsp flaxseed + 1 tbsp water)
Ingredient B
120g all purpose flour
½ tsp salt
A pinch of baking soda
50g Date Jam
Cream ingredient A till fluffy. Add in egg and mix well.
Add in ingredient B and mix till you form a soft dough.
Leave to rest for 30 mins. Roll out into a rectangular 1 inch thick piece.
Spread date jam. Roll and leave to rest in fridge for another 30mins.
Cut across about 1 cm thick. Place on line baking tray and bake at 200C for 8-10 mins.
