Omelette Curry Bengali Recipe—Mamlette’r Jhol—Quick & Easy Indian Egg Recipe

Omelette’er jhol is a Bengali spicy egg curry prepared with omelette instead of regular boiled, pan-fried eggs. Although Bengalis love their egg curry, the ‘mamlette’er jhol’ occupies a special place in their hearts. It is quick to make and requires ingredients that are usually on hand, or easy to acquire in a pinch. What makes the egg omelette curry special, though, is the promise of a warm plate of rice with a flavourful, spicy curry-soaked omelette and juicy potatoes.
This recipe shows you how to prepare extra-spongy, fluffy omelette. If you feel like taking your dim’er omelette’er jhol to the next level, you will not regret the extra effort in preparing these light, airy omelettes. But this recipe works just as well if you decide to make a regular, pan-fried omelette. So whether in a hurry, or tired from a long, rough day, you’ll be hard-pressed to find a more soothing and well-rounded meal than ‘mamlette’er jhol’ and rice.

Egg Omelette Curry Recipe:
Omelette:
Eggs - 3 nos
Large Onion - 1 no
Green Chilli - 2 nos
Coriander Leaves - 1 tsp
Pepper - ¼ tsp
Salt - ¼ tsp
Oil - 1 tsp
Gravy:
Grated Coconut - 2 tbsp
Cumin - ½ tsp
Fennel - ½ tsp
Coriander Powder - 2 tsp
Kashmiri Red Chilli Powder - ½ tsp
Turmeric Powder - ¼ tsp
Garam Masala - ½ tsp
Oil - 2 tbsp
Large Onion - 2 nos
Green Chilli - 3 nos
Tomato - 2 nos
Lemon Juice - 1 tsp
Coriander Leaves - 1 tbsp
Salt - 1 ½ tsp
Instructions:
- Grind Coconut, Cumin seeds, Fennel seeds, coriander powder, red chilli powder, turmeric powder and garam masala powder in a blender with some water and grind to a paste.
- To make omelette whisk all ingredients under omelette and mix well.
- Heat oil in a non-stick pan, when hot, pour the omelette mixture. Once cooked on one side, turn the omelette over with a spatula and cook the other side. Remove from the pan, once cooled, cut the omelette into half and then cut crossways into strips. Roll up the strips and keep aside.
- To prepare the gravy, heat oil in a frying pan, fry the sliced onion over medium heat and cook until onions are golden brown. Add the spice paste and fry for a further 4 minutes.
- Add green chillies and tomatoes and saute for 5 minutes. Add lemon juice, 400 ml of water and salt. Simmer for 10 minutes.
- Add coriander leaves and omelette strips. Cook for a further 3 minutes over low heat and serve with Chapati/Roti.

Ingredients:
For Masala
2 tbsp Oil
3 Onions, sliced
3 Garlic cloves, chopped
1 inch Ginger, chopped
5 Cloves
8 Black Peppercorns
1/2 inch Cinnamon
1 cup Coconut, grated
1 tsp Red Chilli powder
1/2 tsp Turmeric powder
1 tsp Garam Masala powder
1 Tomato, chopped
Tamarind, cherry-sized
Water as required
For Omelette
4 Eggs
Coriander
1/2 cup Onions, finely chopped
2 Green Chillies, finely chopped
Salt to taste
Oil for frying
For Omelette Curry:
2-3 tbsp Oil
Masala
1/2 ltr Water
Salt to taste
Method of preparation:
For Masala
Heat oil in a vessel, add onions and fry them.
Add garlic, ginger, cloves, black peppercorns, cinnamon, coconut, fry them well.
Add red chilli powder, turmeric powder, garam masala powder, mix well.
Add tomato, fry it for a minute, add tamarind, cool it down and grind it well.
Add water while grinding to adjust the consistency.
For Omelette
Beat eggs, add coriander, onions, green chillies, salt, mix well.
Heat oil in a pan, pour half the mixture and let it cook on both sides.
Add the remaining mixture and make the second one.
Cut the omelet into strips.
For Omelette Curry:
Heat oil in a vessel, add masala and fry it for 2-3 minutes.
Add water, salt, give a boil to the curry, add the omelette strips and boil it for a minute.
