How To make Mediterranean Omelette
Ingredients

each
bell pepper, yellow, (or green or red) seeded and chopped
1
each
tomato, medium diced
2
each
garlic cloves
1/4
C
black olives, pitted and sliced
2
each
scallions, green onions -- chopped
4
each
eggs, large or 1 cup egg substitute
2
TB
milk, skim
1
teaspoon
olive oil, extra-virgin
1
teaspoon
lemon juice, prefer fresh
1
TB
herb mixture, basil, oregano, thyme
1
TB
parsley
2
oz
feta cheese, crumbled
Directions:
In a small mixing bowl, combine well the pepper, tomato, garlic, olives, olive oil, lemon juice, scallions (green onions) and parsley. Set aside for as long as you can wait to let the flavors mingle, (at least 20 minutes).
In another small bowl, whisk together the eggs, milk, and herbs. Heat a lightly sprayed nonstick skillet or omelette pan and pour about one-half of the egg mixture into the skillet. Swirl to the edges of the pan. Reduce the heat and cook for 1 to 2 minutes; then slide a spatula underneath the omelette to ease the excess mixture onto the pan's surface.
When the omelet is light brown around the edges and the top surface is barely moist, add one-half of the vegetable mixture to one-half of the omelette, forming a half moon. Add about 1 ounce of the cheese to the mixture and gently fold over the other half of the omelet.
Cover the pan and cook for about 1 minute more; then turn off the heat. Let the omelet sit in the pan for another minute or two until heated throught then slide onto a warm plate.
Re-season the pan with vegetable spray and repeat the process with the remaining ingredients. Serve with Rosemary Roasted Sweet Potatoes or Spinach Spuds.
Makes 2 large omelletes, good for 2 hungry people or 4 people with side dishes.

-Anday (Eggs) 4-5
-Namak (Salt) ½ tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp
-Doodh (Milk) 3 tbs
-Swiss premium Original cheese cream cheese spread ½ Cup or Cheddar Cheese Cream Cheese spread ½ Cup
-Lehsan powder (Garlic powder) ½ tsp
-Hara dhania (Fresh coriander) chopped 2 tbs
-Doodh (Milk) 2 tbs
-Cooking oil 1-2 tbs
-Lehsan (Garlic) chopped ½ tbs
-Shimla mirch (Capsicum) chopped ½ Cup
-Tamatar (Tomato) deseeded & chopped 1 medium
-Hara pyaz (Green onion) chopped ½ Cup
-Hari mirch (Green chilli) chopped 1 tsp
-Cooking oil 1 tbs
-Hara dhania (Fresh coriander) chopped
Directions:
-In a bowl,add eggs,salt,black pepper powder,milk,whisk well & set aside.
-In another bowl,add original cheese,garlic powder,fresh coriander & milk,whisk well & set aside.
-In a frying pan,add cooking oil,garlic & mix well.
-Add capsicum,tomato,green onion,green chilli,mix well & cook for a minute & set aside.
-In frying pan,add cooking oil,egg mixture and cook on low flame for a minute until eggs starts to set.
-On one side of egg omelet,add & spread stir fried vegetable mixture then spread cheese mixture over it.
-Carefully flip omelet,cover & cook on low flame for 2-3 minutes.
-Sprinkle fresh coriander and serve with toasted bread slices.

-Shimla mirch,tamatar,hara pyaz aur hari mirch dal ker ache tarhan mix karein aur ek minute kliya paka lein & side per rakh dein.
-Frying pan mein cooking oil aur anday ka mixture dal dein aur halki ancch per ek minute kliya paka lein.
-Egg omelet ki ek side per stir fried vegetable mixture dal ker pheela lein aur upper sa cheese mixture dal dein.
-Omelet ko carefully flip ker lein aur dhak ker halki ancch per 2-3 minutes kliya paka lein.
-Hara dhania dal dein aur toasted bread slices ka saath serve karein.
