How To make Curried Lentil & Carrot Soup
1 tb Vegetable oil
4 oz Onions, chopped
6 oz Red lentils
4 oz Carrots, sliced thinly
1 tb Madras curry powder
2 pt Boiling water
1 1/2 ts Salt
1/4 ts Paprika
2 sl Bread, made into crumbs
Cilantro, to garnish Heat oil in a large soup pot. Add the onions & saute them for about 10 minutes. Add the lentils & cook for 1 minute, stirring
constantly. Mix in the carrots & curry powder. Cook for 2 minutes. Add the boiling water, salt & paprika. Bring to a boil, lower heat & cover. Simmer for 1 hour, stirring occasionally. Add the breadcrumbs & continue to cook for another 5 to 7 minutes. Ladle into soup bowls & garnish with cilantro.

▶️ RECIPE INGREDIENT LIST: (3 to 4 servings)
1 cup dry red lentils (200g approx.) -
(Soak lentils in water for 20-25 minutes)
Squash (500g approx.) - cut into cubes
3 tablespoon olive oil OR oil of choice
1 cup onion (150g approx.)
1 tablespoon minced/crushed ginger (3 - 4 cloves of garlic)
1 tablespoon minced/crushed garlic (1 inch ginger)
1/2 cup tomato puree OR passata (strained tomatoes)
1 teaspoon turmeric powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 teaspoon (or more) cayenne pepper (OPTIONAL)
4 cups water OR broth
Salt to taste
Garnish:
1/2 teaspoon crushed black pepper
1 or 2 teaspoon (to taste) lemon OR lime juice
2 tablespoon Olive oil

An Unusual Lightly Curried Red Lentil and Carrot Soup With Tomato and Orange
You will need:
• 500g red lentils ( washed and drained, no soaking required)
• Bunch of carrots, scraped and, chopped in chunks
• 1 chopped onion
• 1 tin of whole Italian tomatoes with its juice
• 2 teaspoons curry powder or to taste
• 1 teaspoon cumin seeds
• 2 Chicken stock cubes
• 2 litters water
• 2 cups (500 ml) fresh orange juice
Method:
• Cook until the carrots are soft and the lentils mushy, then cool and blend till very smooth. I use the blender for this and do it in batches. There should be no bits and pieces of carrot floating around in this soup.
• Adjust seasonings. It might need some sugar if the tomato and orange juice were a bit sour and it might also need garlic mixed to a paste with a little salt. The curry taste should not be too strong, but the soup should have a good flavor and a palatable bite.
When I first made this soup according to a friend's recipe, it was from memory and I forgot about the lentils. The soup was equally superb without it, possibly even better. For a first course at a dinner party, I would definitely cook it without the lentils for a delightful and light introduction to a heavy main course.
Lentils require a slightly heavier hand with the curry and does well with a tablespoon of smooth apricot jam instead of sugar should the tomato and orange juice not be sweet enough.
I have eaten only one other soup better than this one. It was a memorable fresh tomato and orange blend served in a delightful courtyard off the dusty main road of a small town in the middle of nowhere. They would not pass on the recipe.

2 TBSP Coconut oil
1 Medium Sized Onion
1 Red Sweet Bell Pepper
3 Medium Sized Sweet Potatoes
1 Tsp Of Thyme
1 Tsp of Turmeric
A Pinch Of Hot Chilli Powder
1 1/2 TBSPS Hot Curry Powder
1 Tsp Garam Masala
1 TBSP Madras Curry Powder
1 Tsp Grated Fresh Ginger
3 Cloves Crushed Garlic
1 TBSP of Tomato Puree / paste
113g Of Dried Raw Red Lentils
150 ml Coconut Milk
enough boiling water to half cover the chunks of sweet potatoes
if too thick when the lentils have cooked you can add more boiling water or coconut milk .
