Directions:
Boil potatoes in skins until partially cooked; cool, peel, and grate. Divide potatoes in 3 equal portions. In a large round crockpot, put in a layer of grated potatoes, salt and pepper, 1/2 stick of butter, cut into pats, 1 cup shredded cheese. Repeat this procedure two more times, then pour milk over this. Cover and cook on MEDIUM heat for 2 1/2 hours, the last 1/2 hour put on HIGH.

This crock pot version of multi-layered scalloped potatoes is so easy, creamy, tender and so cheesy! I’ll be using Yukon Gold potatoes just because they hold their shape until the end, giving your scalloped potato dish a great presentation. I’m also going to show you how to make a homemade sauce that is so thick and creamy! Perfect for this classic side dish. You can cook this on low for 6-8 hours or on high for 3-4 hours so you can go about your daily activities while your dish is cooking. Come home and you’re ready to serve.
Shopping list:
4-5 Yukon Gold potatoes, peeled and slice thinly
1 cup shredded sharp cheddar cheese
¼ cup shredded parmigiano reggiano cheese
¼ diced sweet onion
2 tbs butter
Flat Italian parsley for garnish
Sauce:
1 cup heavy cream
½ cup whole milk
1 tsp Kosher salt
1tsp ground black pepper
1 tsp garlic powder
1tsp onion powder
1 tbls all purpose flour
To make the sauce:
Pour heavy cream into a sauce pan over medium heat
Season with salt and pepper, garlic and onion powder
Add flour and stir constantly until it boils. Reduce the heat.
Add the milk during the last minute or so just to add volume to the mixture.
Remove from heat and stir in cheese
Instructions:
Peel and slice potatoes very thin
Layer potatoes in the crock pot and top with cheese after each layer
Pour sauce over the potatoes and cook on high for 3-4 hours
With about 30 minutes cooking time left, place 2 tbls of butter on top of mixture.
Garnish with parsley and serve

1 c. sour cream
1 Tbsp onion flakes
1/4 c. butter melted
1/4 tsp salt
1/4 tsp pepper
32 oz frozen cubed hash brown potatoes thawed
2 c. sharp cheddar cheese
Instructions
Combine the cream of chicken soup, sour cream, onion and butter in a large bowl. Add hash browns and 1 1/2 c. cheese and stir until combined. Pour into 4 qt slow cooker, cover.
Cook for 4-5 hours on low or until potatoes are tender. Sprinkle the remaining cheese over potatoes and continue to cook 5 minutes or until cheese is melted.

You’re able to eat these potatoes just on their own without any extras but if you’re looking to add something then guacamole, sour cream or even a tomato salsa goes great with this dish.

• 500g (1 lb.) crispy bacon, diced
• 2 medium onions, sliced
• 4 medium potatoes, cut into chunks
• 500g (1 lb.) cheddar cheese, grated
• 30g (1 oz.) butter, cubed
There are quite a few variations that you’re able to do with this dish. For example, you can simply leave the bacon out for just some plain cheesy potatoes. Alternatively, you can add more meat such as shredded chicken or ground beef.
I highly recommend that you pre-cook the bacon as the slow cooker will not make the bacon go crispy. If you’re ok with soft bacon then you can skip frying it and just add it in raw.
It is possible that the potatoes are not fully cooked when 6 hours is up. To test, simply use a skewer and stick it into the potatoes. It should insert easily if the potatoes are cooked otherwise you will need to cook the dish for longer.
Another variation to this dish that you can try is changing the cheese. Different combinations of cheese will give a completely different flavour. For example, you can try adding some brie, goats cheese, mozzarella or even some gouda.
