How To make Creole Lentil Soup
1 c Lentils
2 qt Boiling water
1 1/2 ts Salt
1 ea Onion, chopped
1 ea Celery stalk, chopped
1 sm Green bell pepper, chopped
1 sm Red bell pepper, chopped
3 tb Vegetable oil
1 ts Vegetable broth powder
1 ts Brown sugar
1 ea Bay leaf
4 tb Tomato paste
2 tb All purpose flour
Pepper Douse the lentils in the boiling water, add the salt & let them stand, covered, for an hour. Heat the oil in a pot and add to the vegetable broth powder. Add the diced vegetables, brown sugar, and a bay leaf, and saute for a few minutes before adding it all to the lentils. Cook over a low heat for about 1 1/2 hours. Mix together the flour and the or tomato puree. Add a little of the hot soup, stirring well, then return it all to the pot. Grind in some black pepper, heat through, and serve.

Creole Inspired Lentil and Okra Stew
Ingredients:
1 cup chopped onions (½ medium)
1 cup chopped red bell peppers (1 medium)
2 tbsp minced garlic (about 7 cloves)
½ tsp dried cayenne pepper
½ tsp dried thyme
½ tsp dried sage
½ tsp smoked paprika
1 tsp onion powder
1 tsp garlic powder
1 tbsp Italian seasoning
2 cups crushed tomatoes
1 cup green lentils
5 1/2 cups frozen cut okra (or fresh)
4 ½ cups vegetable broth
2 tbsp hot sauce - not tabasco (optional)
Directions
1. Heat a heavy-bottomed pot over medium high heat.
2. Add onions and bell peppers to the pan. Stir constantly. Add a little broth, a
tablespoon at a time if needed, to prevent sticking. This process should take about 10
minutes.
3. When the mirepoix (onions and bell peppers) is tender, add the garlic and stir for
about a minute more.
4. Add a few tablespoons of broth, stir, and include the herbs and spices: cayenne pepper,
thyme, sage, smoked paprika, onion powder, garlic powder, and Italian
seasoning.
5. Stir in the tomatoes and stir for a minute or so.
6. Add ½ cup broth and okra; stir and simmer for 5 minutes, continuously stirring.
7. Add the rest of the broth and lentils. Bring to a light boil, stir, cover, and simmer on low heat for about 30 to 45 minutes until lentils are cooked to desired consistency, stirring occasionally.
8. Take a cup of the stew and blend for 2-3 seconds and pour back into the pot.
9. Stir and simmer for about 5 more minutes.
10. When done, the consistency should be similar to a thick, chunky gravy. Add additional
broth or water for a thinner consistency, if desired.
11. Serve over rice or a baked potato.
12. Enjoy!

Hi guys! I am back with another delicious recipe for you to try. Today I have made una deliciosa Sopa de Lentejas or Lentil Soup!!
Some tips I have for you are:
1.If you soak your lentils overnight, it will allow them to soften easily and it will reduce its cooking time dramatically.
2. You can add a blend of yellow, red, orange or green bellpeppers to give it a beautiful, tasty and colourful look.
3. Ají Criollo also known as Creole Chili, can be found in hispanic grocery stores.
3. Remember, when adding spices or hot sauce, it is best to start off with small amounts and then gradually increase for a stronger taste. A bland dish can be fixed way easier then a spicy one.
4. If while cooking your lentils, the water is evaporating too quickly and your lentils are far from done, you can add more water and adjust the spices.
5. If you like a thicker soup allow the water to evaporate. If you like a thinner soup, then add more water.
6. In this recipe I am using fresh oregano leaves but you can use dry oregano as well.
Ingredients:
1Lb bag of lentils.
2 tomatoes.
1 onion.
1 handful of culantro/cilantro.
2 bellpeppers (any colour)
1 handful of ají criollo.
3 oregano leaves.
1 big garlic clove (forgot to mention it in the video)
2-3 tbsp of oil.
Enough water to cover the lentils completely.
1 chicken bouillon.
1 tsp of salt.
1/2 tsp of cumin.
1/2 tsp of paprika.
1 tsp of vinegar.
1 tsp of hot sauce.
1 tbsp of tomato paste.
Cooked white rice OPTIONAL.
