How To make Steve's Mum's Lentil Soup
1 lb Lentils (washed)
1 Large onion
3 Cloves garlic
4 oz Mushrooms, sliced
2 Ribs of celery, sliced diag.
2 Carrots, grated
2 ts Oregano or thyme
1 Salt to taste
1 Pepper to taste
1/2 lb Small pasta shells, cooked
Place all ingredients except pasta in a large pot. Cover with cold water to the depth of the 2nd knuckle of your index finger. Cover pot and simmer over low heat until the lentils are tender (about one hour). Taste and correct seasoning. Stir in cooked, drained pasta, and garnish with parsley.

large prepared roast with juice
48 ounces chicken broth
34 - 64 ounces V-8 Vegetable Juice OR tomato juice
3 cups beef broth
1 large onion, grated
2 large potatoes, diced
4 carrots, sliced
4 ribs celery, diced
2 (14 ounce) cans diced tomatoes, undrained
2-3 cups green beans
2-3 cups corn
1 teaspoon Italian seasoning
2 teaspoon garlic
1 teaspoon salt
1 teaspoon pepper
In a large stockpot, combine all the ingredients. Bring to a boil and simmer for 20 to 30 minutes or until the vegetables are tender. 
It’s delicious as soon as it’s prepared but it always seems better after it sits for a day or so.

Cheap Beef & Red Lentil Stew - BUDGET COOKING - Batch Cooking - Recipe # 172
A great recipe for still eating great food on a budget. During this time of inflation, groceries are getting more and more costly, and we want to help you cook delicious food with cheap ingredients! Substitute part of the meat for lentils and you will get all the good nutrients and proteins you need, but for a much lower price. See this cideo and be inspired to cook a large batch of food for the freezer - that's inflation cooking!
Ingredients (for 20 portions):
1 kilo (2.2 pounds) red lentils (dried) (Leave them to soak in cold water for 15 minutes before using them)
300 gr smoked bacon, diced
1/2 kilo (1.1 pounds) minced beef / steak
2 kilos (4.4 pounds) yellow onions
1 kilo (2.2 pounds) carrots
15 cloves of garlic
1 bunch of celery stalks
2 cans (of 140 gr each) tomato purée
4 cans (of 400 gr each) chopped tomatoes
4 cans of water (of 400 ml each)
3 bouillon cubes (beef or vegetable...)
2 dl red wine
2-3 tbsp balsamic vinegar
4 bay leaves
2 tbsp dried basil
2 tbsp dried oregano
salt, pepper and sugar to taste
neutral tasting oil for frying
Serve with pasta cooked al dente.
