Walt Disney World Epcot Recipe: Mushroom Risotto from Le Cellier Restaurant

What's for dinner? How about this Disney recipe?! For episode 3, watch Coral cook up the delicious Mushroom Risotto from Epcot's Le Cellier restaurant in Walt Disney World!
What you will need...it's super easy!
Ingredients:
1/2 lb mushrooms, roasted
4 TBSP olive oil
1/4 tsp minced garlic
salt to taste
pepper to taste
4 TBSP whole butter
1 small onion
1 lb arborio rice
7 cups beef stock
2 cups heavy cream
1 1/2 cups grated parmesan
Method of Preparation:
1. Clean mushrooms and toss with olive oil to coat. Add the minced garlic and season with salt and pepper.
2. Place on parchment lined sheet pan and roast in 375 degree oven for 20 minutes, set aside.
3. In deep heavy pan, melt 2-3 TBSP butter over medium low heat
4. Saute the onions season with salt and pepper
5. Raise the heat to medium and add the rice.
6. Cook for 3 minutes, stirring frequently until it looks chalky and a white dot is visible in center of each grain.
7. Meanwhile, bring beef stock to simmer
8. Heat the cream and keep it on low to keep warm.
9. Begin to add the beef stock one cup at a time, simmering and stirring until each cup has been absorbed.
10. After all beef stock absorbed, fold in roasted mushrooms. Begin adding the cream, 1/2 cup at a time.
11. When ready, rice should be close to tender, but with firmness to bite. Don't overcook to mushy :)
12. Remove pan from heat and fold in remaining butter and parmesan.
13. Allow risotto to rest for a couple of minutes, then enjoy!

5 tb : Butter or Margarine
1 qt : Milk
2 Ribs : Celery; Finely Chopped
1 lb : Sharp Cheddar Cheese; Grate
5 : Mushrooms; Chopped
1/2 ts : Paprika
1/4 ts : Cayenne; (Up to 1/2 T.)
2 tb : Cornstarch

Welcome back to Disney Test Kitchen! We are 7 weeks out from our Christmas Disney trips and vlogs FOR YOU! This week we tackle our first non-dessert or snack - the Canadian Cheddar Cheese Soup from Le Cellier and the Canadian Booth at the Food & Wine Festival. This soup is just a creamy, bacony, cheesy, delicous fat festival that we SUCCESSFULLY made! So check it out and make it for yourself on a chilly autumn night!

Canadian Cheddar Cheese Soup
As is served at Le Cellier Restaurant, Canada Pavilion, EPCOT
Recipe From: The Disney Chef
Ingredients:
- 1/2 pound center cut bacon, cut into 1/2 inch strips
- 1 medium red onion, diced
- 3 celery ribs, diced
- 4 tablespoons butter
- 1 cup all-purpose flour
- 2 cups chicken stock
- 4 cups milk
- 3/4 pound grated white cheddar cheese, medium or mild (Canadian Black Diamond)
- 1 tablespoon Tabasco sauce
- 1 tablespoon Worcestershire sauce
- Salt and pepper, to taste
- 1/2 cup warm beer
- Chopped scallions or chives for garnish, optional
Directions:
In a large pot or Dutch oven, cook the bacon over medium heat until lightly browned. Remove a spoonful to use as garnish. Add the onion, celery, and butter, sauteing until the onion is softened. Over medium heat, add the flour and stir, creating a thick paste-like roux. Slowly whisk in the broth and bring to a boil. Boil for about 1 minute, then reduce to a simmer, simmering for about 15 minutes, allowing the soup to thicken.
After the soup has thickened, whisk in the milk and bring to a gentle simmer, not allowing the mixture to boil. Remove from heat and whisk in cheese until the soup is smooth. Add Tabasco sauce, Worcestershire sauce, and beer.
Serve warm, garnish with scallions/chives and bacon. To reheat leftovers, add milk and reheat until warm, not allowing the mixture to boil.
