How To make Creamy Irish Coffee
4 c Strong fresh coffee
1/4 c Sugar
1/2 c Irish whiskey
1 c Whipping cream
2 tb Sugar
2 tb Irish whiskey
1. Place 4 cups of strong fresh coffee in a saucepan with 1/4 cup of
sugar, or to taste. 2. Add 1/2 cup Irish Whiskey and heat thoroughly but do not boil. (Scotch,
Bourbon or other whiskeys could be used.) 3. Meanwhile whip 1 cup whipping cream until light.
4. Beat in 2 tb each of sugar and Irish whiskey.
5. Pour coffee into mugs or goblets and pipe or spoon flavoured cream on
top.

Take a double shot of espresso coffee, dribble a shot of Baileys Irish Cream down the inside of the glass and gently pour 25 grams of thick cream on top. The layers will settle and provide a visual as well as delicious tasting treat.

The Irish Coffee was first created by a chef/bartender named Joe Sheridan at Shannon airport. During the 1940s Joe prepared a round of spiked coffees for some weary travelers and after one patron asked Is this Brazilian coffee?, Joe replied No, it's Irish coffee!.
A writer sampled the Irish Coffee while transiting through the Irish airport in 1952 and upon his return to San Francisco he shared the drink with his friend Jack Koeppler, then owner of the Buena Vista Cafe. They didn't know the exact recipe so they trialed and tinkered until they replicated the drink. The cafe became famous for their Irish Coffees and now serve 1000s each day!

INGREDIENTS:
- 4 oz hot coffee
- 2 oz Irish whiskey
- 2 oz heavy cream
- 1 tsp dark brown sugar or demerara syrup
DIRECTIONS
1. Heat treat the glass with hot water. This is simply adding hot water to the cocktail glass so that it does not leach heat from the cocktail.
2. Prepare your hot coffee.
3. Whip some heavy cream so that it begins to thicken - to the point where it can stay as a drop on your finger. We don't want whipped cream, but we also dont want straight cream - we want somewhere in between.
4. Empty the hot water from the glass.
5. Add the sugar or syrup to the glass and add about an ounce of hot coffee. Then, using a bar spoon, stir until the sugar has dissolved into the coffee.
6. Add the whiskey.
7. Continue to add coffee until you have a gap about an 1/2.5 cm from the top, stirring as you go.
8. Add the cream to the top by means of a squeeze bottle, or by pouring it over the back of a spoon so that it slowly pours into the top of the cocktail.
9. Serve and enjoy!
