250G DRY CRANBERRY BEANS
2600ML WATER
2 MEDIUM PEELED TOMATOES
3/4 MEDIUM ONION
70G BACON
1 TSP SMOKED PAPRIKA
1/2 BLACK PEPPER
1/2 TSP CUMIN
1/4 TSP CHILI FLAKES
1/4 TSP PINK PEPPER
1 1/2 CLOVE OF GARLIC
1 1/2 TSP SALT
1/2 TSP ORIGANO
1 TSP TOMATO PASTE
3 1/2 TBSP + 1 TSP VEGETABLE OIL

Cranberry Bean Minestrone
This recipe can be endlessly modified. It makes a great *kitchen sink* or *clean out the fridge* meal.
serves 4-6
olive oil
1 yellow onion, diced
1-2 carrots, sliced
about 5 chard leaves (or 1 small bunch), stemmed, stems sliced, leaves torn
1 fresh chile, sliced or chile flakes, to taste
sea salt
4 garlic cloves, minced
handful of sage and/or thyme, minced
1 lb/455 g potatoes, cut into chunks
1 pint tomatoes, cut into chunks
1 cup fresh cranberry beans (or other cooked beans of choice)
6 cups water or broth
lemon (optional)
Heat a soup pot over medium heat, add enough oil to generously coat the bottom. Add the onion, carrots, chard stems, chile/chile flakes, and a pinch of salt. Saute for 10 minutes, or until the vegetables have softened. Add the garlic and herbs, stir around for a minute, until fragrant. Add the potatoes, tomatoes, beans, water/broth, and another generous pinch of salt. Bring to a simmer and simmer, covered, for 25 minutes, or until the cranberry beans and potatoes are tender. Wilt in the chard leaves. Serve the soup warm, with fresh lemon juice squeezed over top (optional).
