Ingredients
Couscous Salad:
1 1/2 cups (250 g) instant couscous
1 1/4 cups (300 ml) vegetable broth
3 small (140 g) bell peppers diced
2 medium (200 g) tomatoes diced
1 small (160 g) cucumber diced
1/2 bunch of parsley chopped
3 stalks spring onions sliced
1 (15 oz) can chickpeas drained and rinsed
Dressing:
2 Tbsp (40 g) tomato paste
2 Tbsp lemon juice
2 Tbsp vegetable broth
3 Tbsp olive oil
1 1/2 tsp maple syrup
1 1/2 tsp Ras el Hanout spice blend
Salt to taste

Couscous salad is an easy, fresh, crunchy, and nutritious meal for any occasion. From a quick lunch and healthy dinner to potlucks and picnics, this couscous salad will be a tasty crowd-pleaser.
⭐️ Ingredients
DRESSING
¼ cup (55 grams) olive oil extra virgin
1 teaspoon (5 grams) lemon zest grated
2 tablespoons (30 grams) lemon juice
1 teaspoon cumin ground
½ teaspoon salt
¼ teaspoon black pepper
1 clove garlic grated
COUSCOUS
1 cup (200 grams) couscous dry
1 cup (240 grams) hot water just boiled
1 teaspoon (6 grams) salt
VEGGIES
1 can (15-ounce) (230 grams) chickpeas or 1½ cups cooked
1½ cups (150 grams) cherry tomatoes quartered
1½ cups (200 grams) cucumber diced
1 cup (130 grams) yellow bell pepper diced
1 (30 grams) shallot finely chopped
½ cup (60 grams) olives sliced
1 handful (30 grams) parsley finely chopped
2 tablespoons (30 grams) pine nuts lightly toasted

This Mediterranean chickpeas ( garbanzo beans ) Couscous salad is the easiest to cook, a perfect lunch and dinner idea anytime and it makes a great healthy vegetarian side dish or main dish too! It only takes a few minutes to prepare and a delicious and healthy dish is on your table.

Ingredients....
1 Cup instant Couscous 250ml ( Moroccan, Israeli pearl or any other couscous products can be substituted.
1 Cup water 250ml
2 tablespoons Extra virgin olive oil
1/2 teaspoon salt
SALAD ITEMS????
1/2 Cup canned Chickpeas beans, drained and rinsed
1/4 Cup minced red Onion
1/2 Cup diced Cucumber remove seeds if any.
1/2 Cup diced red bell pepper
1/2 Cup Black seedless Olives pitted and sliced
1/2 Cup diced Roma tomato, 1/4 inch diced
2 tablespoons Parmesan Cheese
Herbs ????
1/4 teaspoon dried Oregano
1 teaspoon chopped basil
1 teaspoon mint
1 teaspoon parsley
Lemon Dressing ????
2 tablespoons Lemon juice
1 teaspoon Lemon zest
1/4 teaspoon Salt
1/4 teaspoon black pepper
3 tablespoons extra -virgin olive oil
1tablespoon red wine vinegar ( substitute for Balsamic, apple Cider or white wine vinegar )
Instructions...????
Bring water, salt and olive oil to a boil in a medium saucepan. Add couscous and stir quickly, turn off heat and set aside.
Let Couscous stand until 5 minutes then fluff with a fork and let cool.
Lemon dressing...
1. Combine lemon juice, olive oil, lemon zest, vinegar, salt and black pepper together in a small bowl whisk to for a thickened dressing.
2. In a larger bowl combine couscous and salad together, pour the dressing over it, mix all together and serve.
MAKE IT LOW CARB::: Substitute Couscous for Cauliflower rice instead, use 2 1/2 Cups, You can eat raw or sauté and then add with the vegetables.
