This History of Coconut Cream Pie Recipe
There is something so Southern and classy about a homemade coconut cream pie! Getting one on my site was way overdue, mostly since I'm from North Carolina. Now I don't know if this pie originated from the South or if we stole it (and made it better and famous) like we do so many recipes, LOL. Either way, my curiosity got the best of me, and I started digging for the history of this incredible pie. It's hard to believe it didn't originate from the South, being that it's on so many cafeteria and buffet restaurants menu. I couldn't find much history on this pie, but Tux over at Brooklyn Homemade gave me a quick rundown, plus his version of Coconut Cream Pie.

What is coconut cream pie made of?
For those who aren't familiar, coconut cream pie starts with a buttery-baked pie crust like this one. It's filled with a homemade coconut flavored custard and topped with ridiculous mounds of fresh whipped cream! Toasted coconut flakes are sprinkled on top to finish it off. Yeah, it's pretty darn incredible! It's a must-have for those holiday dessert tables!
Bonus: It's also calorie-free if you walk a day on the treadmill and swim most of the Atlantic. That's a fair trade if you ask me. Ok, let me walk you through this thang!

Old Fashion Coconut Cream Pie
This is the old fashion version of coconut cream pie. I got this recipe from my Mother when I was in my 20's and had just started cooking. I use to make this pie about once a week, I loved it that much. Hope you'll try this recipe. Be sure to cook the filling long enough to cook the egg yolks thoroughly. the pie probably needs to sit in the refrigerator over night to ensure the filling is not runny when slicing.

✅Ingredients
Coconut Pie:
1 prepared pie crust
3/4 cup granulated sugar
1/3 cup cornstarch
1 cup heavy cream
1 (13.5 ounce) can coconut milk
1 cup coconut flakes ,divided
3 large egg yolks slightly beaten
2 tablespoons salted butter
1 teaspoon vanilla extract
Stabilized Whipped Cream:
3 tablespoons cold water
1 teaspoon unflavored gelatin
1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
✅Instructions
1️⃣ Preheat oven to 350 degrees Fahrenheit. Lightly toast the coconut flakes by spreading on a baking sheet and toasting in the oven for about 5-7 minutes. Stir occasionally to ensure all is toasted.
2️⃣ Combine sugar, cornstarch, heavy cream, and coconut milk in a medium saucepan. Cook over medium-high heat, stirring constantly until it begins to bubble. Continue stirring for about 2 minutes until it starts to thicken.
3️⃣ Working quickly, remove pan from heat and pour a little of the mixture into the egg yolks, whisk rapidly, and pour back into to the pan. Cook for an additional 90 seconds over medium heat.
4️⃣ Remove from heat again and stir in butter, vanilla, and 1/2 of the toasted coconut flakes. Pour into prepared pie shell. Let cool for about 15 minutes and then refrigerate until completely cooled and set.
Stabilized Whipped Cream:
1️⃣ Make the whipped cream topping by sprinkling gelatin over cold water in a small bowl. Let stand 5 minutes. Then, microwave on high until gelatin melts and liquid is clear, about 5-10 seconds.
2️⃣ Meanwhile, in a large mixing bowl use a hand mixer or stand mixer to whip heavy cream until soft peaks form. Sprinkle in powdered sugar and pour in vanilla extract and continue whipping until combined. Slowly pour in gelatin mixture and whip until stiff peaks form.
3️⃣ Pipe whipped cream onto the top of the completely cooled pie for a decorated effect, or simply spread it over the top of the pie in an even layer. Sprinkle with remaining coconut. Refrigerate until ready to serve.

The Best Coconut Cream Pie
Coconut cream pie is my favorite. I've made this recipe for Thanksgiving and Christmas for years. This is the best recipe. Cream pies are easy but you have to stir, stir & stir some more. I hope you enjoy it as much as I do.
Ingredients
1 cup sugar
1/2 cup flour
1/4 tsp. salt
3 cups milk
4 egg yolks
3 T butter
1 1/2 tsp vanilla
1 cup coconut flakes
For meringue: 4 egg whites, 1/4 tsp cream of tarter, 1/3 cup sugar, sprinkle of coconut
Directions:
Before you make the cream , bake a pie crust (homemade or store bought) .
For the filling:
Put sugar, flour, salt and milk in a pot on medium heat. Whisk continuously to remove lumps then continue stirring until thick and bubbly. Turn heat to low and continue to stir another minute or two while custard continues to thicken. Turn heat off. Separate egg yolks from whites. Save the whites for the meringue. Slightly beat the eggs in a bowl then add a small amount (up to 1/4 of custard) . Be sure to stir the yolk while adding the custard to the bowl. It's important to stir when custard hits the egg to incorporate before the egg cooks from the heat. Now add that mixture back to the pot with the custard and keep stirring. Turn heat back on low and stir a couple more minutes. Add butter, coconut & vanilla and stir until butter melts. Pour the custard filling into the baked pie crust.
For the meringue: Be sure egg whites are in a clean, dry bowl . Mix on high speed till frothy then add 1/4 tsp cream of tarter, let it froth a little more then add 1/3 cup of sugar. Beat until stiff peaks form. (If yolk is in the whites or bowl is wet , the egg whites will not get stiff)
Pour the meringue on top of pie and spread to cover the custard and crust. Sprinkle coconut flakes on top. Bake on 350 until peaks & coconut have browned.
Enjoy the best coconut pie ever!
If you want to make banana cream. omit the coconut and put about 3-4 sliced bananas on baked pie crust then pour prepared custard (without coconut) on top. Add meringue & bake to brown meringue.
