How To make Chocolate Peanut Butter Ritz Cookies
Chocolate (microwavable dipping chocolate is what I use) Ritz Crackers Peanut Butter
Instructions: Take 2 Ritz crackers and spread peanut butter on one cracker then put the other cracker on top (like oreo cookie, sandwich cookie,...) Melt the chocolate in the microwave or stovetop. Dip the cookie in the chocolate, make sure completely covered with chocolate, then put on waxed paper to set. I use white chocolate too.

No-bake Ritz cookies are simply irresistible! This sweet salty chocolatey snack is super-easy and great fun treat to make with kids.

Ingredients
48 Ritz crackers
2 ½ cup semi-sweet chocolate
1 cup creamy peanut butter, sweetened
Sprinkles (optional)
Instructions
1. Line a large baking sheet with parchment paper or silicon mat.
2. Microwave chopped chocolate block or chocolate chips in a bowl for 10-15 seconds burst stirring at each burst. Do not overheat chocolate.
TIP: add ¼ teaspoon coconut oil to chocolate before melting. Coconut oil will help melt chocolate into smooth silky chocolate.
3. Place 24 crackers on the baking sheet leaving little space between each other.
4. Spoon in about ½ to 1 tablespoon creamy peanut butter on top of each cracker.
5. Gently press another cracker on top of to make cracker sandwich.
Repeat with remaining crackers.
PRO-TIP: you can refrigerate cracker sandwich for 20-30 minutes to firm up the peanut butter. It will be easy to work with chocolate coating.
6. Drop a cracker sandwich in melted chocolate. Using two forks, gently move the cracker around to get uniform coating of chocolate.
7. Shake off excess chocolate coating from the cracker sandwich.
8. Place chocolate coated crackers on baking sheet.
9. Repeat with remaining cracker sandwich.
10. If using sprinkles, add sprinkles on top before chocolate sets. You can add coarse sea salt instead of sprinkles.
11. Let Ritz cookies sit until chocolate hardens and set.
12. Store in air tight container.

Ingredients:
- 16 Ritz Crackers
- 3 Tbsp Peanut butter
- 10 oz Dark Chocolate Melting Wafers
- Sprinkles optional
1) Coat one side of the Ritz Cracker with Peanut Butter. Top with another Ritz Cracker.
2) Melt the chocolate in the oven at 30 seconds bursts. Stir in between each burst. Add a few drops of coconut oil and stir in the chocolate is not melting properly. Dip the Ritz Cracker in the Melted Chocolate. Dip just until it gets coated with Chocolate. Tap the spoon at the edge of the plate to drip off the excess. Slide it down to a separate plate using a toothpick.
3) Top with Sprinkles and freeze for 20-30 minutes. If not serving immediately, then refrigerate until you serve it.

Make chocolate peanut butter Ritz cookies with me. These chocolate covered peanut butter crackers are the perfect treat for a morning full of crafting, and that's exactly what we're doing, snacking and crafting together! I love how easy these chocolate Ritz crackers are to make too... You can literally make them in minutes!

INGREDIENTS:
3 sleeves Ritz crackers
1 cup creamy peanut butter
15-20 ounces dark chocolate melting wafers
INSTRUCTIONS:
1. Put a sheet of wax paper on your cookie sheet.
2. Use your knife to spread peanut butter between two Ritz Crackers, sandwiching the crackers together.
3. Set all your peanut butter cracker sandwiches on the wax paper covered cookie sheet, in preparation for dipping.
4. Melt the chocolate according to package directions.* I like to go the easy route, using my large glass measuring cup and melting the wafers in the microwave.*
5. Once the chocolate is melted, dip each cracker sandwich in the melted chocolate, using the forks or tongs. Shake any excess chocolate off before placing back on the wax paper to dry.
6. When all your crackers have been dipped, chill them in the freezer for about 15 to 20 minutes.
7. Remove from the freezer and place in an airtight container or holiday tin. Store them in a cool place; I usually just stick them in the fridge.
*Depending on the type of chocolate used (chocolate almond bark, candy melts, or chocolate chips), some people like to use shortening or paraffin wax, adding it into their chocolate as it melts. This allows for a thinner coat and stretches the chocolate a little further. But if you use a good quality chocolate, you likely won’t need that extra step. I started using Ghirardelli Dark Melting Wafers a few years ago, and I love them so much better than almond bark. They’re so much easier to work with, and they have fantastic flavor.
*You can also melt the chocolate using a double boiler on the stove. This is basically a pan inside of another pan with boiling water in the bottom pan. It allows for more even melting without burning, and it also keeps the chocolate warm for dipping.
