RECIPE DETAILS
INGREDIENTS
2/3 cup butter
1/2 cup sugar
1 egg
1 tsp. vanilla
1 tsp. lemon zest
1 tsp. baking powder
pinch salt
2 cups (+extra for rolling out dough) flour
METHOD
Preheat oven to 375 F and prepare a baking sheet with parchment paper.
Cream butter and sugar about 1 minute.
Add egg, vanilla and the zest of a half a lemon and mix for another minute.
In a separate bowl, combine baking powder, salt, and 2 cups of the flour.
Combine the dry and wet ingredients.
Gather dough into a flat disk, use extra flour on your hands to make sure the dough is not sticky. Cover in plastic wrap and refrigerate 30-45 minutes.
Sprinkle working surface with flour, and roll out dough to 1/8-inch thick.
Use a circle cookie cutter (about 2-3 inch. in size) to cut circles in the dough.
Lift each circle off the surface and place on baking sheet.
Drop about a tsp. of filling onto each circle.
Pinch the circle into a three cornered triangle. Use water on your fingertips if the dough isn’t sticking.
Bake for 10-15 minutes at 375 degrees, until the edges just start to brown.

any kind of jam-

Poppy seeds-
date spread-
Nutella-

How to Make Purim Cookies - Traditional Recipe
Ingredients you will need:
Cookie Dough
3 Eggs
1 Cup Organic Sugar or healthy alternative - preferably not Stevia
3/4 Cup Softened Organic Butter
2 1/2 Teaspoons Vanilla Extract not imitation
1/2 Cup Orange Juice or favorite juice
5 1/2 Cups Freshly Milled Flour for lighter cookies sift flour after milling
1 Tablespoon Baking Powder
1/2 Teaspoon Salt
1 Teaspoon Baking Soda
Blueberry Fig Filling
1 Cup Chopped Figs
2 Tablespoons Tapioca Starch
1 Cup Blueberries
2 Tablespoons Sucanat
1 Tablespoon Water
INSTRUCTIONS
Blueberry Fig Filling
Combine figs, blueberries, and sucanat in a medium saucepan over medium high heat. Bring the mixture to a boil and then reduce heat. Simmer for 20 minutes.
Mash the cooked berries with the back of a fork.
In a small mixing bowl, stir water and tapioca starch together. Add half of the tapioca starch to the hot berry mixture. Stir well until it’s the same thickness as a jam.
Cookies
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or have parchment paper ready.
In a large bowl, cream butter and add the 3 beaten eggs.
Add in organic sugar till lightly and fluffy. Stir in the vanilla and orange juice.
Combine the flour, baking soda, salt and baking powder; stir into the wet ingredients to form a stiff dough. (If the dough is not stiff enough to roll out, stir in more flour.)
On a lightly floured surface, roll dough out to 1/4 inch in thickness. Cut into circles using a cookie cutter or the rim of a drinking glass.
Place cookies 2 inches apart onto the prepared cookie sheets. Spoon about 2 teaspoons of preserves into the center of each one. Pinch the edges to form three corners.
Bake for 12 to 15 minutes in the preheated oven, or until lightly browned.
Allow cookies to cool for 1 minute on the cookie sheet before removing to wire racks to cool completely.
NOTES on how to make Purim cookies.
Add pomegranate juice for a red color.
Add 2 tablespoons cocoa powder to the flour and use hazelnut filling for a delicious chocolate flavor
Replace the filling with about 2 cups of your favorite preserves.

This hamantaschen recipe makes a delicate, citrus-flavored cookie that can be filled with your favorite jams or spreads for a festive sweet.

Ingredients
Dough
3 eggs
1 cup sugar
3/4 cup oil
1/3 cup water
1 teaspoon vanilla
1 teaspoon orange zest
3 teaspoons baking powder
1/2 tsp kosher salt
5 1/2 cups all-purpose flour
Fillings
12 oz Apricot jam, OR
12 oz Strawberry jam, OR
12 oz Nutella chocolate spread, OR
12 oz Poppy Seed filling
Instructions
Dough
In a large bowl or stand mixer whisk eggs and sugar until blended. Add oil and whisk for a minute, it should thicken. Whisk in water, vanilla and orange zest. Add baking powder, salt and 2 cups of flour, mixing with spoon or spatula until the dough starts to come together. Stir in remaining 2 1/5 cups flour and mix until dough forms and there is no dry flour. Cover and refrigerate for an 30 minutes.
Assembly
Preheat oven to 350°F.
Roll out dough to a 1/4-inch thickness, and using a cup or 3-inch round cookie cutter, cut out circles. Gather dough scraps and roll them out again and repeat cutting circles for about 3 dozen.
Place a teaspoon of filling in the center of each circle. Bring up the 3 corners and pinch dough firmly together to form a triangle, allowing filling to be exposed. Place on cookie sheet.
Bake for 15-17 minutes and bottom is golden. Let cool on wire rack.

Hamantaschen – traditional Jewish cookies that are served in Purim holiday. hamantaschen cookies are triangular-shaped cookies that supposed to represent Haman's ears. This hamantaschen recipe makes flaky cookies that are melt in your mouth with delicious date filling. There are many different variations on hamantaschen cookies and many different fillings, the most popular ones: poppy seed filling, date filling and chocolate filling.

Almond Cookies:
Soft and Chewy Chocolate Chip Cookies:
Makes 12 cookies
Ingredients:
For the dough:
1¼ cups (160g) Flour
1/2 cup (60g) Powdered sugar
1/4 teaspoon Salt
7 tablespoons (90g) Butter, cold and into cubes
1 Egg yolk
1 teaspoon Vanilla extract
1/2 teaspoon Baking powder
1-2 tablespoons Milk
For the filling:
Date paste
For decoration:
Powdered sugar
Directions:
1. Make the dough: in a large bowl or in a food processor, combine flour, powdered sugar, salt and baking powder. Add butter and blend until crumbs are formed.
2. Add egg yolk, vanilla extract and 1 tablespoon of milk. Blend until dough is formed, if needed add another tablespoon of milk. Do not over blend.
3. Flatten the dough into a disk form, cover with plastic wrap and refrigerate for 30 minutes.
4. Preheat oven to 170C (340F).
5. Take the dough out of the fridge, roll the dough into about 1/4-inch (1/2 cm) thick. cut into 6-8 cm circles. Fill each circle with date paste and seal as shown on the video. Combine the leftover dough, roll in and repeat the process.
6. Arrange the cookies on a baking tray lined with parchment paper and bake for 12-16 minutes, until slightly golden.
7. Allow to cool, then dust with powdered sugar.
