How To make Chilled Orange Carrot Soup
3/4 ts Ginger, grated
8 ea Carrots, thinly sliced
3/4 c Leeks, white parts only,
-- sliced 3 tb Margarine
4 c Vegetable broth
2 c Orange juice
Salt White pepper 1 ea Orange, halved & sliced
10 ea Mint sprigs
Saute ginger, carrots & leeks in margarine until the leeks are tender, about 4 minutes. Add 3 c of broth, cover & simmer until the carrots are tender, about 35 minutes. Remove from heat & allow to cool.
Transfer to food processor & puree until smooth. Return to pot, stir in remaining broth & half the orange juice. Add remaining juice 1 tb at a time until the consistency is that of a thin soup. Season & chill. Serve garnished with orange slices & mint sprigs.

Ingredients:
1 onion
5 carrots
Salt to taste
5 garlic cloves
1 tsp ginger
3 tbsp. butter
3 cups of water
½-cup cream
Directions:
1. Cut the onion and carrot.
2. In a saucepan, add the butter, and onion, and sauté for about 5 min.
3. Add the garlic cloves, ginger, and salt, and sauté for about 1 min.
4. Add carrot and water. Boil until carrots are tender.
5. Mix with the blender. Add the cream and combine with a spoon. If needed, add more salt to taste.
6. Serve it with toast or garlic toast.
7. Enjoy it!

Carrot & orange soup
Ingredients
• butter 25g
• onion 1 large, chopped
• carrots 500g, cut into small chunks
• orange 1, juiced and ½ zested
• vegetable stock 1 liter
• crème fraîche to serve (optional)
• STEP 1
Heat the butter in a large pan then add the onion and a pinch of salt. Cook for 10 minutes until softened.
• STEP 2
Add the carrots and orange zest and cook, stirring, for 3-4 minutes then pour in the stock and bring to a boil. Turn down to a simmer then cook for 20-25 minutes or until the carrots are completely tender. Use a stick blender to whizz until smooth then stir in the orange juice. Taste and season with pepper and more salt if it needs it. Serve with more pepper and a swirl of crème fraîche, if you like.

2 TBSP EVOO
1/2 TBSP salt
2-3 cloves garlic
1 yellow onion
1/2 TBSP Curry powder
7-8 medium carrots
8-10 cups chicken stock
chives to finish
creme fraiche to finish.
In a pot over medium heat, add onions, and cook for 4 minutes, then add your garlic and curry powder cook for 1 minute.
Then add carrots, chicken broth, salt, and pepper. Bring to a boil Drop to a simmer and cook until everything is soft. then blend your soup until smooth. Season to taste with salt and pepper, and serve with chives and sour cream.
