How To make Chickpea Burgers
2 Scallions; finely chopped
3/4 c Mushrooms; finely chopped
1 ts Canola Oil
3 lg Garlic; Cloves
1 c Chickpeas; cooked or canned
1/2 c Chickpea Liquid
1/4 c Sunflower Seeds
1/2 ts Curry Powder
2 Egg Whites (or 1/4 c
-dry bread crumbs) 1/2 c Sesame Seeds; or more
Saute Scallions and mushrooms in oil until limp, about 5 minutes. In a blender, combine garlic, chckpeas and chickpea liquid, blend until smooth. Transfer to a large bowl and combine with mushroom mixture. Grind sunflower seeds in a blender or food processor to make a coarse meal, add to chickpea mixture along with curry powder. Mix well. Stir in egg whites or bread crumbs. Mixture will be soft, On a large baking sheet or bread-board, make 8 to 10 beds of sesame seeds for patties. Shape burger mixture into 8 patties and place on seeds. Flip to coat both sides generously. Grill on a well-oiled vegetable grill for 3 to 4 minutes on each side, until brown.

Veggie Chickpea Burger
Makes 6

540-mL can chickpeas (not drained)
1 cup sliced almonds, toasted
1 cup panko
1 large garlic clove
1 green onion, chopped
1 tablespoon coarsely chopped rosemary leaves
½ teaspoon salt
Zest of 1 lemon
2 tablespoons fresh lemon juice
2 tablespoons extra- virgin olive oil
Canola oil
Combine all of the ingredients, except the canola oil, in a food processor. Purée until smooth. Shape into 6 patties (the mixture will be sticky, and shaping the patties is easier with slightly wet hands) and place on a parchment-lined baking dish. Chill at least 20 minutes, and for as long as 24 hours.
Heat a large non-stick frying pan over medium-high. Brush each patty with a little canola oil and add to the pan. Cook about 2 minutes per side, or until golden, then reduce the heat to low and cook another 5 to 7 minutes, or until piping hot (poke a small knife or metal skewer into the centre of the patty and then place the utensil on your lower lip—it should feel very warm). Serve on buns with sliced tomatoes, onions and condiments.

Yield: 2-4 servings - Quantity Ingredients
Burger
1 15oz can - chickpeas, drained & rinsed
1 ea - whole egg
2½ cup - oatmeal
½ cup - shredded carrot
½ cup - diced red onion
1 ea - diced jalapeño
½ cup - diced red bell pepper
1 Tbls - red hot sauce
1 Tbls - olive oil
1 Tbls - fresh lemon juice
1 Tbls - chopped cilantro
1 Tbls - Chef Brik’s “Original Rub” rub
1 tsp - salt
½ tsp - pepper
Slaw
4 cup - slaw mix
½ bu - sliced scallions
1 ea - jalapeño
2½ Tbls - mayo
1Tbls - honey
1 tsp - sugar
2 tsp - white wine vinegar
as needed - salt & pepper
Sauce
¼ cup - mayo
1½ Tbls - red hot sauce
2 tsp - relish
2 tsp - paprika
Toppings
as needed - green leaf lettuce
as needed - slaw mix
1 ea - smashed avocado
Slices - cheddar cheese or any cheese
Method
In a food processor, combine all the ingredients for burger mix & pulse until smooth yet still chunky texture.
Scoop a handful of the mixture to form the patties to the size of your burger buns. Place in the fridge so burgers will set & cool, or freeze the patties
Take a nonstick pan & bring to heat over medium high heat with 1 Tbls olive oil.
Cook the patties about 3-5 mins per side or till golden brown.
In a mixing bowl, combine all ingredients for the slaw mixture, mix together & set aside.
In a separate mixing bowl, combine all ingredients for the sauce, mix together & set aside.
When ready to assemble, grill the bun to get some color
Assemble the burger with all the toppings.
NOTE:
To make the burger vegan, substitute the egg with Flax egg (1 Tbls flax seeds & 3 Tbls
water) & vegan cheddar cheese.
