Homemade Chicken Mole/Made From Scratch (No Chocolate)
6 skinless chicken legs boiled with 1 tsp salt. boil until cooked through approximately 20 to 30 minutes (remove foam that formed on top)
sauce:
5 New Mexico chili pods washed and seeds removed
1/2 onion
2 garlic cloves
6 chili de arbol (don't remove seeds) just rinse.
plus 1 cup of water from boiled chicken for blender. 1/2 cup water to clean blender cup.
2 tbsp melted butter
2 tbsp all purpose flour (to thicken sauce)
spices:
1 tsp cumin
1 tsp salt
1 tsp oregano
1 tsp chicken bouillon
add 1 cup more cup of water from boiled chicken to chili mixture before adding chicken.
boil chili pods, onion, garlic and arbol peppers for 15 minutes until soft. Let cool a little before blending.
put above items in blender with 1 cup of red water blend and strain. I added 1/2 cup of red water in the blender to remove anything left in blender cup and added it to the chili sauce.
in a pan add 2 tbsp of butter until melted, add 2 tbsp all purpose flour. stir for 2 min. add red sauce a little at a time, stirring constantly. add spices and 1 cup of water from boiled chicken. add chicken to red sauce. serve with Spanish rice and beans. Yummo!!!!!!!
***I used a total of 2 1/2 cups of liquid for this mole***
EASY CHICKEN MOLE RECIPE | DONA MARIA MOLE
Ingredients needed
11 chicken thighs
2 tbsp chicken flavor bouillon
1 jar Dona Maria mole sauce (8.25oz)
1 tbsp peanut butter
2 cups of chicken broth from the chicken broth
Boil chicken thighs and add chicken bouillon
In a blender add mole sauce, 1 tbsp peanut butter 1 cup chicken broth (from boiling the chicken)
And if need to add additional 1/2 cup till mole is smooth but not watery
Add mole to a pot low heat and add cooked chicken thighs. Mix well and Add additional (1cup of broth to mole)
Cook 20 min low heat

Directions:
Chicken marinate with chilly powder, salt and pan fry them till chicken is tender.
Cut Tomatoes into half and char on a griddle till it is soft.
In a pan dry roast the following ingredients Coriander seeds, cumin seeds, cinnamon sticks, cloves and then add allspice, add fennel seeds, almonds, raisins, chopped garlic, add chopped onions, cook this and add oil, oregano, add roasted tomatoes, chicken stock, salt and let it cool down, put it in the blender and make a paste. Heat olive oil and add red chilly paste, cook it for a minute and add made masala paste cook this mixture for some time, and add melted bitter chocolate, salt, Mix it well cook for some more minutes. And pour the sauce on the chicken pieces.
Serve this with Mexican rice.

4 Chiles negros
4 Chiles Padilla
5 guajillos
5 chiles de árbol
2 tomatoes
1/2 onion

MOLE MADE EASY: Only 3 Ingredients & a jar of Doña Maria Sauce
When we don't have time to cook things from scratch, a good short-cut is much appreciated. That's what you get with this Mole Made Easy recipe. It starts with a jar of Doña Maria mole sauce, which you can find in the ethnic food aisle of your local grocery store, and you add only 3 ingredients to it. The result is a creamy, delicious mole sauce that you can mix with shredded chicken, pour over your favorite burrito, or make enchiladas with. The possibilities are endless. The hardest part of this recipe is opening the jar, and I'm not exaggerating! There's a trick to it, so be sure to check out the video. And read on for the easy recipe.
Mole Made Easy
1 jar Doña Maria mole sauce
4 cups chicken broth
1 round tablet of Mexican chocolate
2 Tbsp. peanut butter
Heat large skillet on stove with burner set to low. Empty jar of mole into skillet. (It's a thick paste, so it's helpful to use a butter knife to get it out.) Add 4 cups of chicken broth and raise heat to medium high. Stir and break up pieces of paste until it's dissolved into chicken broth. The sauce will begin to thicken as it cooks. Break Mexican chocolate into smaller pieces using a serrated knife, then add chocolate to pan and let it melt into the sauce. Add in peanut butter. Lower heat and stir continually until all the ingredients are melted in and you're left with a smooth sauce. Enjoy this delicious mole sauce while it's hot.
*Mole thickens as it cooks, so cook longer for a thicker sauce, or add more chicken broth or water if you like it more runny.
