Episode 154: Southern Chicken and Noodles ????
Hello my Friends!
It is Cold outside so today I am making so delicious Chicken and Noodles. It is so delicious, comforting, and it will warm up your Body and Soul!
1/2 bag (1 pound) extra wide egg noodles, cooked
8 cups water
4-5 chicken pieces, any parts, washed
1 large onion, diced
2-3 stalks celery, chopped
Favorite seasonings
1 (10 3/4 oz) can cream of chicken soup
1 (10 3/4 oz) can cream of mushroom soup
In a large pot of boiling salted water, cook egg noodles according to the directions on the package, drain and set aside. In another large pot on high heat, add water, chicken, onion, celery, and seasonings; bring to a boil. After it comes to a boil, cover and turn the heat down to low and simmer for 1 hour. After 30 minutes, add both soups, stir, cover, and continue cooking for the last 30 minutes. After 30 minutes, add the cooked pasta and continue cooking uncover for 10 minutes. Serve with your favorite side dishes.

*INGREDIENTS:*(2 servings)
100g noodles (any kind works)
2 chicken breasts
1 tsp light soy sauce
1/2 tsp garlic
1 tsp cornstarch/cornflour
2-3 tbsp cooking oil
*Vegetables:*
1/2 red bell pepper/capsicum
1/2 green bell pepper/capsicum
1 small carrot
1 small broccoli
2 green onions
*Stir Fry Sauce:*
1 tbsp light soy sauce
1 tbsp dark soy sauce
1 tsp sugar
1/4 tsp black pepper
1 tsp garlic paste
1/2 tsp ginger paste (optional)
1/4 cup water
1 tbsp cornstarch/cornflour
(Taste and adjust salt if needed)

*SUBSTITUES:*
No dark soy sauce?
Replace with 1 tbsp light or regular soy sauce + 1 tsp sugar. The noodles will have a lighter colour than in the video.
No light soy sauce?
Replace with regular soy sauce
No cornstarch/cornflour?
Replace with 2x all purpose flour
What other vegetables can be used?
Cabbage, snap peas, snow peas, bok choy, mushrooms, bean sprouts.

*TIPS:*
• Spaghetti noodles work great for beginners as it does not break or turn mushy easily
• Ensure the noodles is only 70% cooked. It should be soft on the outside but hard on the inside. It will continue cooking while stir frying
• Ensure the noodles have cooled properly before stir frying or they’ll turn mushy
• The glaze is caused by the cornstarch in the sauce so I highly recommend not skipping it
• Don’t cook the chicken for too long in the beginning. Add the veggies once it gets a sear so that it’s not overcooked at the end
• The stir frying needs to be done in high heat so the vegetables don’t steam and turn soggy

-Spaghetti 300g
-Namak (Salt) 1 & ½ tsp or to taste
-Cooking oil 1-2 tbs
-Soy sauce 1 tbs
-Sirka (Vinegar) ½ tbs
-Safed mirch powder (White pepper powder) 1 tsp
-Namak (Salt) ½ tsp or to taste
-Lehsan powder (Garlic powder) 1 tsp
-Chicken boneless stripes 300g
-Baking soda ¼ tsp
-Cooking oil 2 tbs
-Soy sauce 2 tbs
-Chilli sauce 3 tbs
-Chilli garlic sauce 1 tbs
-Oyster sauce 2 tbs
-Til ka tel (Sesame oil) 1 tbs
-Cheeni (Sugar) 1 tbs
-Namak (Salt) 1 tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Cooking oil 1-2 tbs
-Gajar (Carrots) julienne 1 cup
-Shimla mirch (Capsicum) julienne 1 cup
-Band gobhi (Cabbage) shredded 1 & ½ cups

-Stir fried vegetables

Directions:
-In boiling water add spaghettis & mix well.
-Add salt, mix well & boil until tender (4-5 minutes).
-On a pot place a strainer, strain it & rinse with tap water. Add oil, mix well,strain & set.
-In a bowl add soy sauce, vinegar, white pepper powder, salt, garlic powder & mix well.
-Add chicken boneless stripes & mix well.
-Add baking soda & mix well. Cover & let it rest for 15 minutes.
-In a wok add cooking oil, marinated chicken, cook for 4-5 minutes on medium flame or until done & set aside.
-In a bowl add soy sauce, chilli sauce, chilli garlic sauce, oyster sauce, sesame oil, sugar, salt, black pepper powder, mix well. Chowmein sauce is ready & set aside.
-In the same wok add cooking oil, carrots, capsicum, cabbage, mix well & sauté for 2 minutes. Take out & set aside.
-In same wok add cooking oil, garlic & mix well.
-Add spring onion white, mix well & sauté for a minute.
-Add boiled spaghettis & mix well for a minute.
-Add cooked chicken & mix well.
-Add prepared chowmein sauce, mix well & cook for 1 minute on high flame.
-Add stir fried vegetables & mix well.
-Add spring onion leaves, mix well & serve.

-Karahi may oil garam karen or marinated chicken daal kar 4-5 minute tak medium flame pe pakayen or alag rakh den.
-Aik bowl may soy sauce, chilli sauce, chilli garlic sauce, oyster sauce, til ka tel, sugar, namak, kali mirch powder daal kar milayen. Chowmein sauce tayar hai.

Homemade Chicken and Noodles
-Boneless/Skinless chicken thighs (5-6)
-1 carrot chopped
-1 stalk of celery chopped
-2 to 3 family size cans of cream of chicken soup
-2 family size cartoons of chicken stock/chicken broth
-2 bags of extra wide egg noodles
-1 stick of salted or unsalted butter
-Onion powder
-Black pepper
-Garlic powder
-Salt
-Creole or cajun seasoning
-Smoked paprika
-Italian seasoning
Chicken Chow Mein with fried noodles
Delicious Chinese stir fried noodle recipe that's quick to make. Chow Mein basically means stir fried noodles. This version fries the noodle a little, bringing out the nutty flavour while adding a little crispiness. When buying Chinese egg noodles, look for the Hong Kong style or the ones with Chow mein on the packet.
It’s a fairly simple recipe, in fact I can prepare it and cook it faster, than calling for Chinese food delivery. Having a good wok with a powerful jet does help, but you can certainly do it in a frying pan at home. The wok gives you that wok hei, some also call it breath of the dragon or wok breath. That’s what gives your food that smoky or charred aroma flavour you get in real Asian cooking. You don’t get the same result in a pan, but the pan is much healthier, so it’s a good trade off. I have my wok set up outside then bring the food inside, it drives the neighbours crazy with that beautiful outdoor cooking smell.
I used broccolini for this recipe, I like the green colours mixed with the red bell pepper, but you can use other vegetables such as Chinese cabbage, bok choi etc.
