Ingredients
2 tablespoons olive oil
1 small onion diced
1/2 bell pepper chopped
3-4 cloves garlic minced or crushed
1 jalapeno seeded and minced
1/4 cup cilantro chopped
4 cups chicken broth (32 ounce) can replace water if needed
2 chicken breasts boneless, skinless (about 1 pound)
14 ounces fire-roasted tomatoes (diced or crushed)
1 cup corn (fresh, canned, or frozen)
1 tablespoon ground cumin
1 tablespoon chili powder
1 teaspoon salt or to taste
1 cup heavy cream or to taste
1/2 cup shredded cheese of choice (I like using cheddar)

This easy chicken tortilla soup recipe is thick and hearty! Such big flavors, this is the ultimate comfort food with black beans, corn, peppers, and fun crispy homemade tortilla strips, it's the perfect weeknight meal.

THINGS YOU’LL NEED:
1.5 pounds boneless chicken Cut into bite-sized pieces - use a 2 medium-sized chicken breasts or 4 chicken thighs, or a combination of them
Salt and pepper to taste
1 tablespoon olive oil
3-4 jalapeno peppers chopped (use hotter peppers if you'd like, or use poblano pepper for milder)
1 medium onion chopped
3 garlic cloves chopped
2 large tomatoes chopped (canned tomatoes are good as well - use 14.5 ounce can)
½ cup corn, frozen is OK
1 tablespoon chili powder I used a combination of ancho and Spanish paprika
1 teaspoon cumin
3 cups chicken broth
1 can black beans, drained
2 tablespoons chopped cilantro + more for serving
For the Crispy Tortilla Strips
1/2 cup vegetable oil
6 corn tortillas cut into strips
FOR SERVING: Use your favorite toppings, like diced avocado, jalapeno slices, hot red pepper flakes, fresh chopped parsley or cilantro, crumbly white cheese, hot sauce, or more.

- 4oz (113g) bacon
- 1 lb (16oz) chicken thighs, boneless & skinless
- 1 medium onion
- 5 cloves of garlic, finely chopped
- 2 Serrano chilies
- 2 teaspoons (2g) ground cumin
- 1 teaspoons (1g) ground coriander
- 1 teaspoons (1g) smoked paprika
- 1/2 teaspoons (1g) cinnamon
- 2 dried guajillo chilies, de-seeded
- 1 dried ancho chili, de-seeded
- 4 cups (960ml) chicken stock
- 2 ears of corn
-1/2 28 oz can crushed tomatoes
- salt to taste
- cilantro for garnish
- 2 avocados, diced
- 3 limes
- 1 piece Oaxaca cheese
-1 cup shredded cheddar
Fancy:
- 3-4 fried corn tortillas
- 3-4 Chicken skins
- 100ml cream
- 150ml soup
- 35g tomato paste

1 red onion
1 jalapeno
3-4 cloves of minced garlic
5 cups chicken broth
1 can of red kidney beans (not drained)
1 can of drained black beans
28 oz can fire roasted diced tomatoes
1/2 cup sweet corn
1-2 tsps better than bouillon chicken base
2 tsps dried oregano (or fresh)
1 can of chipotle peppers in adobo (use 1/2 can for less spice)
salt, pepper, garlic, onion powder (to taste)
1-2 tbsps smoked paprika (plus more as desired)
1-2 tbsps ancho chile powder
2-3 tsps cumin
1 packet sazon
