How To make Chicken Parmigiana
1 1/2 tb Olive oil
2 Whole small chicken breasts
- skinless and boneless - split and blotted dry Salt Freshly ground black pepper 3/4 c Purchased marinara sauce
-=OR=- Spaghetti sauce 1 ts Dried oregano; crumbled
8 oz Fresh mozzarella cheese
- thinly sliced IN A LARGE, HEAVY oven-proof skillet, heat the oil until hot and almost smoking. Add the chicken breasts, turn back down to medium-high heat and saute until lightly browned, about 3 minutes. Season with salt and pepper. Turn and cook the second side for 1 minute. Remove the breasts, let them cool slightly, then slice into a fan. Return the chicken to the pan, pour over the marinara or spaghetti sauce, sprinkle on the oregano, place the mozzarella slices on top. Turn on your broiler and adjust the rack to 6 inches from the heat. Run under the broiler until the cheese is hot and bubbling. Serve at once with boiled orzo pasta.

½ kilo chicken breast fillet, pounded
Salt, garlic powder, pepper (to season chicken)
1 cup all-purpose flour
2 pcs eggs
2 cups fine bread crumbs
½ teaspoon dried basil
½ teaspoon garlic powder
Butter and oil, for pan frying
Homemade Tomato sauce:
2 tablespoons olive oil
1 tablespoon minced garic
¼ cup minced onions
½ teaspoon dried basil or oregano
2 cups crushed tomatoes
2 tablespoons grated parmesan cheese
Salt and pepper, sugar, to taste
Quick-melting cheese and parmesan cheese (to serve)
How to Make CHICKEN PARMIGIANA Like an Italian
Chicken parmigiana can be likened to Italian crumbed chicken with toppings, typically including cheese and tomato sauce, but is it Italian? NO! This is a dish which has become famous over the world and many mistaken it for being authentic but most variations are pretty un-Italian! Except, maybe, my one. As an Italian I have recreated this pub-classic with delicious authentic ingredients and believe me there is no going past this recipe for a cheesy chicken stack that is smothered in rich tomato and basil sauce. I even have two options for cheese on top, would you prefer buffalo mozzarella or burrata? Either way you will never order this out again. It might not be authentic, but I’ve created a Chicken Parmigiana that even my family would enjoy.

Stuffed Chicken Parm ????????
2 large chicken breasts
1/4 cup mozzarella cheese (stuffed)
1 cup flour
1 cup Italian style bread crumbs
1/4 cup Parmesan cheese
3 eggs
Seasoning:
Salt to taste
1 Tbsp paprika, garlic powder, cayenne (total amount for the three stations)
1 cup tomato sauce (I used @raoshomemade)
Top with 1/2 cup mozzarella
Parmesan cheese to taste
I can't believe I've never made Chicken Parm like this
Today we're making chicken parm with vodka sauce. Well seasoned crispy chicken cutlets are baked with vodka sauce, mozzarella, and a sprinkle of Pecorino. Use Parmigiano if you want but I think Pecorino is better. Enjoy!
