8 boneless skinless chicken breast halves all-purpose flour
for dredging salt and pepper :
to taste 1/2 cup butter or margarine 1 clove garlic
minced 1/2 cup fresh lemon juice 1/3 cup fresh parsley :
chopped lemon slices -- for garnish Pound chicken breasts with meat mallet. Coat chicken with flour; season with salt and pepper. Melt margarine in large skillet. Add chicken and garlic. Cook over medium heat until chicken is tender on all sides. Remove chicken to serving platter; keep warm. Add lemon juice to skillet, scraping drippings from bottom of pan. Bring to boil; boil 1 minute or until slightly thickened. Stir in parsley. Pour sauce over chicken. Garnish with lemon slices.

Ingredients: 2 Chicken breasts or thighs Salt to taste Pepper to taste 2 tablespoons Olive oil 2 tablespoons (30g) Butter 3-4 Garlic cloves, crushed 3/4 cup (180ml) Chicken broth 3/4 cup (180ml) Heavy cream 2 tablespoons Lemon juice 1 tablespoon Lemon zest 1 tablespoon Parsley/coriander/dill, chopped
Directions: 1. Cut each chicken breast in half lengthwise. Season both sides of each chicken with salt and pepper. 2. In a large skillet heat olive oil over medium heat. Cook the chicken for 3-4 minutes on each side or until golden brown and cooked through. Remove from the pan and set aside. 3. Melt 2 tablespoons of butter, add crushed garlic and cook over low heat for 2 minutes. Add chicken broth, lemon juice and bring to a simmer. Add heavy cream, lemon zest, salt to taste and pepper to taste. 4. Return the chicken the skillet and cook until the sauce has thickened. 5. Turn the heat of and stir in chopped herbs. 6. Serve!
