How To make Chicken Breasts Florentine

chicken breasts, boneless skinless

flour, unbleached

seasoned dry bread crumbs

dry white wine

onion soup mix, golden
1 1/2
cup
water

parsley, chopped fine

teaspoon
pepper
Directions:
* Side dishes to create a bed for the Chicken include Hot Cooked Rice
Piliaf or White Rice and/or Hot Cooked Spinach.
Dip chicken in flour, then eggs, then bread crumbs.
In large skillet, heat oil and cook chicken over medium heat until almost
done. Remove chicken. Reserve 1 T drippings. Add garlic and wine to
reserved drippings, and cook over medium heat 5 minutes. Stir in golden
onion recipe soup mix thoroughly blended with water, bring to a boil.
Return chicken to skillet and simmer covered 10 minutes or until chicken is
done and sauce is slightly thickened. Stir in parsley and pepper. To
serve, arrange chicken over hot rice and spinach; garnish as desired.
MICROWAVE DIRECTIONS:
Omit oil and decrease wine to 1/4 C. Dip chicken in flour, eggs, and bread
crumbs as above. In 3-quart casserole, heat chicken, uncovered, at HIGH
(Full Power) 4 minutes, rearranging chicken once. Stir in garlic, then
golden onion recipe soup mix, thoroughly blended with water and wine. Heat
uncovered on HIGH (Full Power) 5 minutes or until boiling, stirring once.
Decrease heat to MEDIUM (50% of Full Power) and heat uncovered, stirring
occasionally, 7 minutes or until chicken is done and sauce is slightly
thickened. Stir in parsley and pepper. Let stand covered 5 minutes.
Serve as above.

Chicken Florentine
Ingredients
1 1/2 lbs chicken breast
1/2 cup flour
4 garlic cloves, minced
2 tablespoons butter
1/4 onion, small diced
1/2 cup chicken broth
1 cup heavy cream
4 cups baby spinach
Directions
Slice each chicken breast in half horizontally and pound evenly.
Season chicken with salt and pepper. Dredge each piece into flour, shaking off the excess.
Heat oil in a pan over medium high heat and cook chicken. Cook until cooked through, about 3-4 minutes per side depending on the thickness. Remove and set aside.
Melt butter over medium heat, sauté garlic wne onions for about 2-3 minutes.
Pour in chicken broth and heavy cream, season with salt and pepper and bring to a boil. Lower heat back to medium and let simmer for 2-3 minutes, until sauce has slightly thickened.
Add spinach and cook until spinach has wilted.
Return chicken back to pan and remove from heat.
Optimal- serve with lemon wedgesr

Ingredients
2 boneless skinless chicken breasts
salt and pepper
2 tablespoons oil
1 tablespoon salted butter
3 cloves fresh minced garlic
¼ teaspoon Italian seasoning
¼ teaspoon salt
⅛ teaspoon black pepper
1 tablespoon flour
½ cup dry white wine (can sub with chicken or vegetable broth)
½ cup chicken broth
½ cup heavy whipping cream
2 cups fresh spinach
2 tablespoons Parmesan cheese
Instructions
Halve chicken breasts the long way, so that you have two thin pieces of chicken breast (see video for a visual). Season with salt and pepper.
Heat oil in a large skillet over medium heat. Add chicken and brown on both sides until golden brown (about 4-5 minutes per side), working in batches if necessary.
Remove chicken to a plate and cover to keep warm.
Add butter to the skillet and melt. Add garlic, Italian seasoning, salt and pepper and cook 1 minute.
Stir in flour until no white remains.
Add wine, broth, and cream. Bring to a simmer over medium heat and cook until slightly thickened, scraping the bottom to loosen any browned bits if necessary.
Stir in the spinach and Parmesan and return chicken to the pan.
Cover and reduce heat to medium-low and allow to heat through. Chicken is done when it reaches an internal temperature of 165 degrees F.
