A winter dish that is so good for you and brings such comfort - Barley and Chicken Soup
Barley and Chicken Soup
Ingredients
2 brown onions (250g), diced
2 carrots (225g), thinly sliced
2 tbsp extra virgin olive oil
2 tbsp salt flakes
2 tbsp verjuice
¾ cup barley, uncooked
2 ltr chicken stock
Gremolata
1 clove garlic, finely chopped
1 tbsp lemon zest
2 tbsp parsley, finely chopped
Method
1. Heat extra virgin olive oil in a frypan and add onion and carrot, and cook over a medium heat for a few minutes.
2. Once the carrot has started to soften, deglaze with verjuice.
3. Season with salt flakes and add barley. Stir though, coating all the barley grains.
4. Add stock and stir through, then simmer for 40-45 minutes until the barley is soft.
5. Whilst barley is cooking, prepare gremolata. Combine the garlic, lemon zest and parsley in a bowl.
6. When cooked, serve soup with croutons or gremolata and garnish with flat leaf parsley.

Superb Chicken Barley Soup
Ingredients: 1 T. Olive Oil, 1 Large onion, 1 t. minced garlic, 8 cups chicken broth, 1 1/2 cups of chopped carrots, 3 stalks chopped celery, 1 can 14.5 oz diced tomatoes, (no need to worry about taking out some of the juice off tomatoes, it will turn out the same) 3/4 cup pearled barley,2 1/2 cups cooked chopped chicken breast, (or chicken of your choosing) 2 bay leaves, 1/2 t. dried thyme
DIRECTIONS: Heat olive oil over medium heat in a large pot. Add onions and garlic and cook until slightly softened. Bring to a boil then reduce heat to simmer and cook for 1 hour or until barley is tender. Discard bay leaf.
30 Minute Dinner Rolls- 1 cup warm tap water, 1/3 cup oil, 1/4 cup sugar, 2 T. yeast, 1/2 teaspoon salt, 1 egg beaten, 1 T. softened butter, 3 1/2 cups all purpose flour, 1/8 cup milk room temperature
INSTRUCTIONS: 1) Preheat oven to 400 degrees, 2) In large bowl combine 1 cup water, oil, sugar, and yeast. Let sit until yeast is bubbly (about 8 minutes). Stir in beaten egg, softened butter and salt.
3) With a stand mixer OR by hand, add flour, one cup at a time until you have a soft dough that isn't sticky. Knead by hand 10 minutes or 5 minutes with a stand mixer.
4) Divide dough into 18 even pieces and form into balls. Place in a greased pan and cover with parchment paper and a kitchen towel over top of parchment paper. 5) Let rise 10 minutes in a warm place. (You can allow them to rise up to an additional 30 minutes if time allows) Optional--lightly brush with butter and bake on middle rack for 10-12 minutes or just until browned.

I was thinking of making alternative to chicken noodle soup - like a healthier version without the noodles. I still wanted soup to be filling. And then I saw all the pearled barley I had waiting to be used. So, I used it instead of noodles. I made the soup countless times since! This chicken barley soup, chicken barley soup easy, chicken barley soup low calorie, chicken barley soup recipes is way better than the one with noodles. It tastes healthier and richer. And it’s more filling.
For this chicken barley soup recipe, chicken soup with barley, chicken soup with pearled barley, chicken soup withouth noodles, I usen chicken breasts but I tried it with the thighs and it tastes just as good. I just thing the shredded chicken breasts look better.
And since I used barley instead of noodles and water instead of oil this is also healthy chicken barley soup and a low-calorie chicken and barley soup. Barley is actually good and nutritious to consume if you are watching your calorie intake. It thickens the soup which is why it turn out more filling.
For veggies, for this healthy chicken and pearl barley soup I used lots or carrots and celery. You can also use broccoli if you like.

Instant Pot Chicken and Barley Soup
I’ve been dabbling with the Mediterranean diet over the last few months and came across the source for this recipe in Urvashi Pitre’s Instant Pot Miracle Mediterranean Diet Cookbook:
I like her writing and presentation of recipes as well as the simple ingredients – nothing too fancy or difficult to find. I’ve made a few recipes from the book so far and they’ve all worked out well.
The recipe shown in this video mostly follows the original recipe’s instructions, but of course, with modifications based on my personal preferences and what I already had in my fridge and pantry. I really enjoyed the deep yellow color of the soup from the turmeric and I’ve been looking for ways to incorporate it into my diet for more health benefits. Feel free to make adjustments according to your preferences.
NOTE: This was a very filling soup and the recipe makes enough for 4 generous portions. You can double the recipe, leaving the cook time at 15 minutes, but let the pot do a full natural release to prevent the barley starches from foaming up through the float valve.

Instant Pot Duo 6 Quart:
Today’s Ingredients:
4 bone-in, skin-on chicken legs (1½ lbs in the video)
1 cup chopped onions
1 cup chopped carrots
1 cup chopped celery
3 garlic cloves, thinly sliced
½ cup pearled barley
1 TB Better-than-Bouillon, roasted chicken flavor
1 tsp ground turmeric
1 tsp salt
1 tsp black pepper
½ tsp red pepper flakes
1 bay leaf
3 cups water
2 TB lemon juice, more or less to taste
½ cup chopped fresh parsley, plus extra for topping
salt and pepper, to taste
Instructions:
1. Place the first thirteen ingredients (chicken through water) into an unheated Instant Pot. Lock and seal the lid and cook on high for 15 minutes followed by a 10 minute natural pressure release. Then release any remaining pressure before reopening the pot. [Fair warning: due to the high volume of liquid and ingredients it will take about 15 minutes for the pot to come to pressure and begin the timer.]
2. Discard the bay leaf and move the chicken to a plate for shredding. Discard bones and cartilage. Optionally, you can also discard the skin if it bothers you. Return the shredded meat (and skin) to the pot.
3. Stir in the lemon juice and parsley. Taste and adjust seasoning to your liking. ENJOY!
