13 Minute Cherry Almond Scones With Cherry Butter || Easy Easter Brunch Scones || Afternoon Tea Cake
Celebrate the start of spring or Easter Sunday with these 13 minute Cherry almond scones and cherry compound butter. Bake these inside but enjoy them outside during a garden tea party or even as a snack while sitting under a tree admiring the blossoming flowers. This recipe includes cherries soaked in almond liquor for that extra special touch.
Ingredients:
Scones:
2 cups flour
1/3 cup sugar
1 tablespoon baking powder
1 cup cold Heavy cream
1 stick of cold butter
1 teaspoon pure vanilla extract
1 large egg
1/2 cup dried cherries that have been reconstituted in almond liquor
Icing drizzle
Powdered sugar
1/4 teaspoon Almond extract
Heavy cream
Compound butter:
1 stick butter
Cherry jam or preserves
PREHEAT OVEN 425F
* In a cold bowl sift together flour, sugar, baking powder, and salt.
* Squeeze extra moisture out of reconstituted cherries either by pressing them into a tea towel or cheesecloth, or using a fork to press them into the side of a strainer of colander
* Add reconstituted cherries into flour and give them a quick toss to coat them in the flour
* Grate cold butter into flour mixture
* Use a pastry cutter to cut butter in to flour until it resembles coarse meal or sand.
* Add vanilla and egg into the cold heavy cream and lightly combine with cream
* Add cream to flour and mix with a wooden spoon until it just about combined
* Use tips of fingers to get the dough to come together in a loose ball
* Turn the dough out onto the countertop or baking mat and form ball into a disc shape about 2 inches thick and round the outside edges
* With a knife or pizza cutter cut circle into 6-8 wedges depending on the size of scones you’re looking for
* Put scones on an un-greased baking sheet and bake 425 degrees for about 12-15 minutes, until a light golden brown color is achieved. They will continue to firm up when pulled out of the oven
* Once cooled drizzle with almond icing and top with almonds
* Enjoy with cherry butter or simply plain
