Corn Soup and Cheddar Cheese Biscuits

This corn soup recipe is as easy as it gets! Sweet and creamy, with a hit of Chipotle hot sauce, paired with my easy Cheddar Biscuit recipe, it makes for a great dinner idea or yummy lunch!

CORN SOUP
Serves 4 as a main

INGREDIENTS:
1 tbsp (15 ml) olive oil
1 cup (127g) yellow onion, diced
⅓ cup (30g) celery stalks, chopped
1 garlic clove, sliced
Salt and pepper to taste
4 cups (946ml) of Vegetable or Chicken broth
1 16-ounce (453g) bag of frozen yellow corn
1 cup (200g) russet potato, peeled and cubed
Garnish:
Avocado, diced
1-2 dashes of Chipotle Hot sauce
Fresh cilantro
METHOD:
Heat olive oil in a large Dutch oven. Saute the onion, celery, and garlic until soft and fragrant. Season with salt and pepper to taste.
Add the broth and potato. Simmer until the potato is soft and tender. About 10-15 minutes. Then add the corn and cook until warmed through and tender.
Transfer soup to a blender and blend on high until smooth and creamy. Transfer into a clean pot and taste for seasoning, season with salt and pepper if needed.
Ladle into bowls and top with a drizzle of hot sauce, diced avocado and fresh cilantro.
Serve with my Cheddar Biscuits!
CHEDDAR BISCUITS
Makes 8 biscuits
PRINT RECIPE HERE:
INGREDIENTS:
2 cups (240 g) flour
1 tablespoon (15 ml) baking powder
¾ teaspoon (4 grams) salt
1 tsp (5 ml) smoked paprika or ⅛ tsp cayenne pepper
4 tablespoons (60 g) butter, cubed
3/4 cup (62g) grated Cheddar Cheese
½ cup (52g) green onions (white parts and green parts)
1 cup (240ml) of milk
METHOD:
Preheat oven to 400F (200C).
Line a baking sheet with a baking mat or parchment paper.
In a large bowl whisk together the flour, baking powder, salt, and smoked paprika or cayenne pepper. Then add the butter and work it in between your fingers smushing it in between the flour until a coarse meal forms.
Then add the cheese and the green onions. Whisk to combine.
Then add the milk and stir with a spatula or a Danish dough whisk.
Use an ice cream scooper to spoon out 8-drop biscuits. Top each one with freshly cracked pepper.
Bake for 25 mins.

OAT BISCUITS RECIPE
(Makes 16 biscuits)
Ingredients:
2 cups ground oats (or oat flour) (200g)
1 tsp salt
1.5 cups cheddar cheese, shredded (180g)
1 cup buttermilk (235ml)
NUTRITIONAL INFO (per biscuit):
97 calories, fat 4.6g, carb 8.8g, protein 4.8g
Preparation:
In a large bowl, combine dry ingredients, ground oats and salt.
Mix in the shredded cheddar cheese.
Pour in the buttermilk and using a wooden spoon mix until the dry ingredients are just moistened.
Transfer the dough to the counter and press with the hands for 2-3 times, no more than that. You don't want to over work the dough.
Roll the dough 1/2 inch thick and cut the biscuits with cookie cutter or any glass you want.
Place biscuits on lined baking sheet and brush with buttermilk.
Bake at 350F (180C) degrees for 20-25 minutes.
Eat warm or store in the box for up to 5 days.

Cheddar Biscuits Recipe
Quick recipe for an amazing cheese appetizer. What not to like to these cheddar biscuits? Buttery, flaky, garlicky and cheesy ... one of the best combinations ever and they do look really appetizing as well.
Ingredients:
Makes about 10-12 biscuits
2 cups (250g) flour
2 1/2 tsp (10g) baking powder
1 tbsp (15g) sugar
1/4 tsp salt
1 1/2 tsp garlic powder
5 tbsp (70 g) cold unsalted butter, cut into small cubes
3/4 cup (200g) buttermilk, cold
1 cup (100g) matured cheddar cheese, grated
For brushing the tops
2 tbsp (30g) melted butter
1 clove garlic, minced
1 tsp chopped fresh parsley
1/4 tsp salt
Directions
1. Preheat oven to 400 F (200 C). Line a baking sheet with parchment paper.
2. In a medium-large bowl whisk together flour, sugar, salt, baking powder and garlic powder. Add the butter cubes, and using a pastry cutter or fork cut the butter until the pieces are no bigger than peas.
3. Add the grated cheese and just give a quick stir to combine with the flour mixture. Incorporate the cold buttermilk until just combined, don't overmix.
4. Take large spoons of mixture and with the help of another tablespoon place them on the prepared baking sheet. Optional sprinkle some grated cheese on top of each.
5. Bake for about 15-18 minutes until golden brown. While they bake, prepare the butter mixture. Melt the butter into a small sauce pan, add garlic, parsley and salt and cook for 1 minute. Remove from heat.
6. Brush the tops of the biscuits with butter mixture and serve hot.

Have you ever wondered how to make Cheese Biscuits at home, then your search ends here! With Anushruti learn to make yummy and tempting Cheese Biscuits, after all your snack time Tea needs a companion and what's better then a Biscuit!
Ingredients:
140 gm (1 cup) whole wheat flour
100 gm (1/2 cup) butter
200 gm (1 1/2 cups packed) cheddar cheese, grated
1/2 tsp cayenne pepper or red chilli powder or paprika powder
1 tsp salt
Method:
- In a large bowl, with the help of a hand held mixer blend the butter and cheese until smooth. In another bowl mix in the flour salt and chilli powder.
- Stir the dry ingredients into the butter and cheese and mix well with your hands until the dough comes together.
- Alternatively, cut chilled butter and cheddar cheese into cubes and process in a food processor fitted with a metal blade. put in the dry ingredients and process again until you you have a smooth dough. Do not over process the dough.
- Form the dough into a ball and knead briefly for a minute or two and then divide into 2 equal halves. Roll the dough into a log and wrap with baking parchment or grease proof paper. Twist the ends to seal it (like a toffee wrapper).
- Chill the logs for 3 to 4 hours in the refrigerator. If you are in a hurry, put the logs in the freezer for about 30 minutes. This makes it easier to cut into slices.
- Unwrap the chilled dough. Cut into 1/4” slices. Place them on a baking sheet covered with parchment or grease proof paper.
- Bake in a preheated oven at 200 degrees centigrade (400 F) for 10 to 12 minutes or until browned at the edges. If you have cut your slices very thin, it could be done in 8 minutes.
Note: Depending on your oven and your preference the baking time for these could vary from 8 to 12 minutes. I like my wafers crispy and browned and bake it for longer, more like 10 minutes.
