How To make Ceviche Acapulco
3/4 lb Red snapper fillets; cut in
-1 x 1/2 inch pieces 8 oz Small peeled and deveined sh
-rimp 8 oz Scallops
Juice of 6 limes Marinade: 3/4 White onion; finely chopped
4 Serrano peppers; chopped
2 Tomatoes; finely chopped
3/4 c Pimento-stuffed green olives
-- finely chopped 1/4 c Parsley; finely chopped
1/2 c Cilantro; finely chopped
3/4 c Tomato juice
2 tb Olive oil
2 tb Jalapeno pepper strips, fine
-ly chopped, with juice 2 tb Worcestershire sauce
2 tb Oregano; dried and crushed
Salt to taste Garnish: Cilantro, chopped Avocado Place seafood in glass bowl. Cover with juice. Marinate 4 hours or overnight. Drain. Return seafood to bowl. Mix onion, serrano peppers, tomatoes, olives, parsely and cilantro. Stir in tomato juice, oil, jalapenos with juice, Worcestershire, oregano and salt. Pour sauce over fish, mix gently and marinate for 1 day in refrigerator. Fill serving cups with ceviche, garnishing with cilantro. Ceviche can be refrigerated for up to 5 days. Ingredients for the tomato sauce:
250g (9oz) Tomato paste
1 tea spoon of garlic powder
2 tea spoons of ginger powder
1 tea spoon of dried thyme
1 tea spoon of paprika powder
2 tea spoons of onion powder
1/2 tea spoon of cloves powder
1 tea spoon of mustard powder
1/2 tea spoon of 5 peppers mix (or just black pepper)
3-4 tea spoons of salt
5-7 tea spoons of sugar (or agave syrup)
1-2 table spoons of apple vinegar
1 table spoon of Salsa Valentina Style*
*You can use Valentina, Cholula even replace with Texas Pete or Tabasco sauce
Ceviche ingredients for 4 people:
1kg(2lbs) Shrimps cooked 95 °C (203 °F)
4-5 tomatoes
1 white onion
fresh jalapeno, serrano, arbol or habanero is fine as long as they are fresh
100g (3,5oz) of cilantro (coriander)
2-3 oranges
4-5 limes
2-3 avocados (the more the better :D)
1/2 tea spoon of dried oregano
1 table spoon of extra virgin olive oil
Salty crackers, corn tostadas or tortilla chips.

This Peruvian dish is very underused around the world.
This video shows you how to make a very simple, fresh and perfect ceviche.
We ate it with tostadas, the amazing hard corn tortilla from Mexico, but you can enjoy it on bread or in a salad or any way you want.
You really should try this perfect ceviche recipe! You can add and subtract anything you want, the main thing is to let the fish cure within the lemon and lime juice. The smaller you cut your fish, the less time you need for curing.
You will need
fish - I used sea bass
2 lemons
2 limes
2 tomatoes
1 red onion
50g olives
coriander
1/2 cucumber
salt
pepper
Maggi sauce
olive oil
And then top it off with avocado and chipotle mayonnaise.
