Carob Cake
Carob is a traditional plant substitute for cocoa. It is nutritious and does not have caffeine. It is easy to bake with. Here is my basic cake recipe...1& 1/2 cup of flour of your choice, 1/2 cup of natural sweetener ( like coconut palm sugar ), 3 TBSPS carob powder, 1/4 tsp salt.1 tsp baking soda, ..mix dry ingredients then add 1 TBSP oil of your choice, 1 TBSP apple cider vinegar, 1 tsp extract of your choice, 1 cup water..mix and bake for about 25 min at 350 degrees [f].The cake will be just a little sweet. It is a dry cake so you can pour juice over it or nondairy milk if you want it moist. This recipe is extremely flexible. You can use applesauce instead of the sweetener or juice instead of the water. Keep in mind that the consistency needs to be like a thick pancake batter to bake properly. Experiment with the ingredients. I used lemon juice instead of the water once - so it tasted like lemon cake. Mashed banana turned out like banana cake. If you add a fruity wet ingredient like banana or applesauce instead of the natural sweetener then reduce the amount of water you use.

Ingredients:
For the cake:
1½ cups (190g) All-purpose flour
1/4 cup (30g) Cocoa powder
1 teaspoon Baking soda
1/4 teaspoon Salt
1 cup (200g) Sugar
1/3 cup (80ml) Vegetable oil
1 cup (240ml) Water
1 teaspoon Vanilla extract
1 tablespoon Vinegar or lemon juice
For the frosting:
200g dark chocolate
200g full fat coconut milk
Directions:
1. Make the cake: Preheat oven to 350F (180C). Grease a 8-inch (20cm) round cake pan and set aside.
2. In a large bowl, stir flour, cocoa powder, baking soda, salt and sugar.
3. Add water, oil, vinegar and vanilla extract. Stir until combined.
4. Pour the batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes, release from the pan, then let to cool to room temperature.
5. Make the frosting: chop the chocolate into small pieces and place in a heatproof bowl. Set aside. In a small saucepan heat the coconut milk, pour hot coconut milk over the chocolate and let sit for 2 minutes, then mix until melted and smooth.
6. Chill in the fridge for about 30-60 minutes or until set, beat the frosting until fluffy and frost the cake as desired.

Gluten-Free Carob Cake
My daughter sweet 16 birthday cake. She loved it so much, a second one was requested. She said, mom you have come a long way with your glutenfree baking LOL!!
RECIPE
Dry ingredients
1 cup white rice flour
1 cup brown rice flour
1 Tbsp. baking powder
1/2 tsp. coriander
1/2 cup carob powder
Melting
1/3 cup carob chip
1 Tbsp. milk
Whipped
1 cup butter
3/4 cup maple sugar
1/2 cup flax seed gel ( egg replacer)
Add 3/4 cup milk
Frosting
1 cup milk
1/4 cup flour (GF)
1/4 cup carob powder
1/3 cup agave
1/4 cup carob chips
1/2 tsp. coriander
METHOD
1. Cream butter, sugar and flax seed gel
2. Add melt carob chips and milk to cream mixture
3. Mix dry ingredients well, add slowly to batter
4. Whisk for 2 mins on medium speed
5. Slowly add the 3/4 cup milk to the batter
6. Whisk for another 3 mins, use a spatula to scrape the sides into the mixture. Pour batter into a 9 inch baking pan, bake at 350 for 45 mins
7. Blend ingredients for frosting for 1 min
8. Pour into sauce pan, stir for 5 - 10 mins on med to high heat
9. Remove stove, let sauce completely cool
10 Add 1 Tbsp. butter (room temp.)
11. Whisk well
12 Frost cake
