How To make Cannelloni with Cheese& Spinach
2 x 225g bags of microwave-in-the-bag fresh
young leaf spinach 18 sheets fresh lasagne
250 g ricotta cheese
300 g mascarpone cheese or cream cheese
1 large free-range egg yolk
40 g freshly grated Parmesan cheese
freshly grated nutmeg 450 ml cheese sauce
125 g grated mozzarella cheese
1. Cook the spinach, following the instructions on the packet. Put the lasagne in a bowl and pour boiling water over to cover. Leave to soak for two minutes.
2. Meanwhile, put the ricotta, mascarpone, egg yolk and Parmesan in a food processor and mix. Add the drained spinach and process again. Season with salt, pepper and nutmeg.
3. Preheat the oven to 180C/350F/Gas 4. Put a spoonful of the mixture on a drained sheet of lasagne. Fold over to enclose the filling and place in a greased ovenproof dish, folded side down. Repeat until all the lasagne is used up, then pour the sauce over and sprinkle with mozzarella. Bake for 30 minutes until golden.

Make Bacon & Cheese Fried Cannellonis. Because frying things makes them delicious.
Spinach and Ricotta Cannelloni Recipe (Using our Whatever Pan!)
Ingredients
• 280gr cannelloni
• 260gr baby leaf spinach
• 250gr ricotta cheese
• 250gr greek yogurt
• ¼ tsp freshly grated nutmeg
• 1 garlic clove, crushed
• 1 lemon zest
• Tomato and parmesan passata
• 70gr dried breadcrumbs
Method
• Boil the cannelloni until al dente and set aside.
• Heat the oven to 200°C. Add olive oil to your Whatever Pan and start frying the spinach. Once cooked, drained the water and add the ricotta, greek yogurt, nutmeg, garlic, lemon zest,salt and pepper.
• Once the mixture is done fill the cannelloni and set aside.
• Add tomato passata to the Whatever Pan, add the cannelloni and cover with the rest of the passata.
• Cover with foil and place in the oven for 30 minutes.
• Remove the foil, sprinkle the bread crumbs and bake for another 10 minutes.
• Buon appetito!

INGREDIENTS for one baking dish:
Cannelloni 300g
Spinach 500g
Pancetta 200g
Ricotta 250g
For the béchamel sauce:
Milk 1 liter
Butter 100g
Flour 100g
Nutmeg
Parmesan cheese 150g
PROCEDURE:
Start by preparing the béchamel sauce by combining butter and flour. Cook for 1/2 minute, then gradually add all the cold milk while whisking until it thickens.
Sauté the pancetta in a pan, set it aside, and in the same fat, cook the spinach.
Once cooked, squeeze them well and mix them with ricotta, pancetta, and Parmesan cheese.
Mix thoroughly, and put the filling into a pastry bag.
Fill each cannelloni properly and place them on a baking dish coated with béchamel sauce. Create two layers and finish with Parmesan cheese.
Bake at 200°C (390°F) for 25 minutes.
