*How to make Mini Christmas Cakes - Xmas Cake Recipe*
These are miniature Christmas fruit cakes also known as Christmas Cake. These are individually sized portions. Perfect if you want to make them into Christmas gifts for your family and friends. Made with all the traditional ingredients, there is nothing missing from this recipe. These Christmas Cakes are rich, fruity and decadent. The only difference is their size.
They also present the opportunity for you to decorate them individually, maybe with a person's initials or just an ornament. The tops are marzipan and icing just like a proper Christmas Fruit Cake. If you make these I'd love to hear your feedback. I hope you enjoy this recipe, I've carefully considered the measurements so that you would have a flawless outcome with this bake for the holidays.

*TIMINGS.*
• Prep Time: 15 mins.
• Cooking Time: 60 mins
• Total Time: 75 mins.
• N.B. It's best to soak the fruit overnight.
*SERVINGS.*
Makes 6 mini Christmas Cakes - 18 slices.
*INGREDIENTS.*
• 1¼ cups (175g/7oz) Raisins.
• 1¼ cups (175g/7oz) Currants.
• 1¼ cups (175g/7oz) Sultanas.
• 3 tbsps Brandy/Whiskey/Rum/kirsch.
• ½ cup + 3 tbsp (150g/5oz) Butter, softened.
• ¾ cup (150g/5oz) Dark Brown Sugar
(If using white sugar add 1 tbsp of Treacle/Molasses).
• 4 Medium Eggs.
• 1 cup + 1 tbsp (175g/7oz) Plain/All Purpose Flour.
• ½ tsp Mixed Spice.
• ¼ tsp Nutmeg.
• 1 tbsp Treacle/Molasses.
• ½ Orange Zest or 1 tbsp of Orange Juice.
• ½ Lemon Zest or 1 tbsp of Lemon Juice.
• ¼ cup (50g/1½oz) Glace Cherries.
• ¼ cup (50g/1½oz) Mixed Peel (optional).
• ½ cup + 1 tbsp (50g/1½oz) Ground Almonds.
*OVEN TEMPERATURES.*
Preheat the oven:
• Fan Oven: 140°C/280°F.
• Oven: 160°C/320°F.
• Gas Mark 3.
*METHOD.*
1. Place the raisins, sultanas and currants in a bowl and add the alcohol.
2. Soak for a few hours or overnight.
3. When the fruit is ready, preheat the oven to the above temperatures.
4. Grease 6 x 200g bean tins with melted butter and double line the bottoms and sides with greaseproof paper. Be careful as the rim of the tins may be sharp.
5. Whisk the butter and sugar until soft. Add in the eggs one at a time while continuing to mix the mixture.
6. Pour in the flour, nutmeg, cinnamon, treacle/molasses, zest of orange and lemon and mix again until thoroughly combined.
7. Add the soaked fruit, glace cherries, mixed peel and ground almonds.
8. Using a spoon fold in the fruit.
9. Using a spoon, fill the tins to ¾ of the way full and level with the top with the back of a spoon. I make a small dip in the centre of each mini cake so that they don’t rise like “volcanoes” during baking.
10. Bake for 60-75 minutes and use a skewer to check that they are fully baked
11. Remove from the oven and while hot poke with a skewer making sure the skewer goes all the way to the bottom.
12. Feed each mini cake with ½ tbsp of alcohol. if storing the cakes for a few weeks before decorating wrap them in greaseproof paper and store them in a cool place.
*N.B.* You can continue to feed the mini cakes once a week if you wish.
13. Decorate the mini cakes when cold.
14. If required level the top of each of the mini cakes. Brush with a little marmalade/apricot jam.
15. Place a 7cm round disc of marzipan on top of the mini cake and push down.
16. Brush warm water on top of the marzipan and add a 7cm round disc of fondant icing.
17. Decorate with cranberries, Christmas cake decorations or fondant. If adding fondant decorations to the top, stick them with a little warm water.
18. Store in a cool, dry place (not the fridge) until ready to serve.

*STORAGE.*
Store in a cool, dry place away from direct sunlight. It's best to wrap your cake in parchment/greaseproof paper and then in foil twice. After wrapping, pop the cake in an airtight container.

안녕하세요.
분 베이크입니다.
오늘은 한천을 사용하여 아름다운 과일 젤리케이크를 만들어 봤어요.
치즈케이크 부분에도 한천을 이용하여 만들었어요.
한천은 젤라틴과 녹는점 자체가 다르므로 작업의 공정이나 사용 온도가 많이 다릅니다.
또한 식감도 많이 차이가 납니다.
젤라틴은 섭씨 25도 정도부터 녹기 시작하므로 입 안에 넣었을 때 사르르 녹는답니다.
젤라틴은 섭씨 70도 이상으로 가열하면 그 성질을 잃어버리기 때문에 높은 온도로 가열하지 않아요.
하지만 한천은 섭씨 79도 이상에서 가열해 주어야만 녹고 45C~50C에선 굳기 시작하므로 높은 온도에서 사용해야 합니다.
그래서 한천은 실온에서도 아주 잘 굳습니다.
하지만 젤라틴과 마찬가지로 산에 약합니다.
그래서 키위, 망고, 파파야...등의 과일과 함께 사용하신다면 한천의 비율을 더 많이 사용해야 합니다.
그리고 저처럼 음료수를 사용하게 된다면 주의 사항이 있어요.
음료수 중에서 신맛이 많이 첨가된 음료수는 피하셔야 합니다.
한천이 완전히 굳어지기 전에 젓거나 흔들면 형태가 무너집니다. 주의해야해요.
잘 굳었나? 궁금해도 흔들어 보면 안 됩니다.????
또, 혼합액을 부을 때 틀에 오일을 바르거나 라이닝을 하면 안 됩니다.
이렇게 하지 않아도 잘 빠지며 라이닝은 혼합액의 굳기를 방해하거든요.
젤라틴과 달리 한천은 굳은 후에도 다시 녹여 사용 할 수 있어요.
다시 끓인 다음 식혀도 굳는 성질이 전혀 달라지지 않습니다.
그래서 한천을 부드럽게 만들기 위해 다시 가열을 해도 됩니다.
한천은 사람의 위 속에서 팽창하기 때문에 배가 부르다는 느낌을 갖게 해줍니다.
일본에서는 “칸텐 다이어트”라고 알려져 있으며 과식을 예방하기 위해 많은 사람들이 시도하고 있어요.
한천은 이 밖에도 혈당수치를 안정적으로 유지하는 데 도움을 줄 수 있어요.
하지만 한천 다이어트를 시작하기 전에 반드시 의사와 상의해야 합니다.

레몬즙 5g ( 1 tsp )
바닐라 익스트랙 3ml
생크림 150g ( 2/3 컵 )
우유 75g ( 1/4 컵 + 2 tsp)
물 50g ( 3 Tbsp + 1 tsp )
한천 4g ( 2 tsp )
설탕 5g ( 1 tsp )
● 한천 젤리
무색 투명한 쥬스 1000g ( 4 컵 + 1/4 컵 ) 또는 물
한천 9g ( 1 Tbsp + 1 tsp )
설탕 240g ( 1 컵 + 3 Tbsp )
( 쥬스 대신 물 사용시 ... 설탕 290g ~ 300g )

Oil 2/3 Cup ( 150ml)
Vanilla Essence. 1 tsp
Baking Powder. 1&1/2 tsp
Baking Soda 1/2 tsp
Bake in a preheated oven @ 165 C for 60 minutes or until a skewer inserted in the middle comes out clear..

This is a moist and soft Christmas cake that my family has been making for generations! It is with No Alcohol! This has a special twist and it is a tropical flavor!
The whole fruit cake is based on a sweetened coconut base! with the mix of tasty fruits and nuts, the cake is crunchy, and soft at the same time!
When you bake this, the whole house fills with a wonderful Christmas smell!
Try this easy dessert recipe this festive season and impress everyone! You will make it every day!
♣️ Ingredients:
For the Coconut base:
Desiccated coconut 2 cups (190g)
1/2 cup (120ml) of hot water
For the caramel syrup:
Sugar 100g (1/2 cup)
water 2 tablespoons and 1/4 cup
Salt 1/4 teaspoon
Fruit base:
Dates (about 1/2 cup)
150g (about 3/4 cup) of dried Sultanas & Cashew nuts
fresh grated Ginger 1 tablespoon
zest of a Lemon or Lime and zest of 1/2 an Orange
juice of 1/2 an Orange
1 teaspoon of Cinnamon powder (you can add all spice powder, instead of this)
This is 1/2 teaspoon of Cardamom powder (optional)
Golden syrup or Honey 2 tablespoons
Vanilla Extract 1 teaspoon
Finally,
2 Eggs
Melted Butter 75g (1/3 cup)
120g (1 cup) of flour
1 teaspoon of baking powder
1/4 teaspoon of Baking soda

♣️ Instructions / How to make
Desiccated coconut 2 cups(190g). Add 1/2 cup (12ml) of hot water. Mix well and set aside.
???? Let's make a simple caramel
Add Sugar 1/2 cup (100g) into a pan. Add 2 tablespoons of Water. The pan should be over medium heat. Let it bubble away and the color changes gradually.
After the color changed to amber, I added 1/4 cup (60ml) of water. Mix well! Now add the coconut to the caramel. Mix well! Add 1/4 teaspoon of Salt. Mix and cook for another minute. It is ready (Set aside)
???? Let’s prepare the Fruit base
Dates (about 1/2 cup). These are whole Dates. So, I pitted them! Rinse them under clean tap water. Now cut them into smaller pieces. The dates are ready now!
150g (about 3/4 cup) of dried Sultanas & Cashew nuts
Add the dates and dried fruits to a bowl
Add fresh grated Ginger 1 tablespoon
Then add the zest of a Lemon or Lime and the zest of 1/2 an Orange
Add the juice of 1/2 an Orange
1 teaspoon of Cinnamon powder (you can add all spice powder, instead of this)
1/2 teaspoon of Cardamom powder (optional)
Golden syrup or Honey 2 tablespoons
Mix well! Set aside!
???? Let’s assemble the cake
Add the sweetened coconut to a bigger bowl. Add the fruit mixture to the bowl
Vanilla extract 1 teaspoon
Beat and add 2 Eggs
Melted Butter 75g (1/3 cup)
Now sieve 120g (1 cup) of flour. with 1 teaspoon of baking powder. And 1/4 teaspoon of Baking soda. Mix well with a spoon
The baking pan is a 7-inch round pan, double-lined with baking paper. Put the mixture in carefully
Bake in a preheated oven, at 180c (356f) for 45-50 minutes
