Kelly Kettle Cooking: How to make a frying pan pizza using the ultimate base camp kit
About this video:
If you’re looking for Kelly Kettle cooking ideas or a simple campfire recipe look no further! In this video I’ll be using the Kelly Kettle Ultimate Kit to make a frying pan pizza and cook it over an open flame during a visit to Kirtlington Quarry.
Kirtlington Quarry in Oxfordshire, UK was owned by the Portland Cement Company who operated a busy quarry and cement works on this site between 1907 and 1928, with finished goods being taken up the Oxford Canal to markets in the Midlands.
Quarrying the limestone and clay beds has exposed rocks around 160 million years old and has unearthed large numbers of fossils including marine shells, mammals teeth, bones and some land plants.

A Bit About Me:
We all know that home is where the heart is. But that doesn’t have to be made of bricks and mortar with a view that only changes with the seasons.
On my journey I’ll demonstrate how low impact living in a small space can make travel and adventure possible.
I’m Neil, an individual with a thirst for adventure and spend my time time living and travelling in a combination of my converted van, under canvas and on my adventure motorcycle. On my journey I demonstrate how low impact living in a small space can make travel and adventure possible.
My social channels Park it, Pitch it or Moor it will appeal to anyone with an interest in travel, adventure, camping, camper vans and small space living, whether this is using two wheels, four wheels or something that floats. I have a great passion for the outdoors and want to get people out there enjoying the world as I do.
As well as home being where the heart is, home can be wherever you park it, pitch it or moor it!

SPINACH MUSHROOM QUICHE WITH POTATO CRUST created by Kim Campbell
Recipe:
Ingredients:
2 tablespoons flax meal or chia seeds
5 tablespoons water
2 large potatoes, shredded, rinsed and squeezed OR one bag hash brown potatoes from Whole Foods or Trader Joes, both have no oil and very little sodium
1 teaspoon garlic powder
1 teaspoon onion powder
¼ teaspoon sea salt
¼ teaspoon black pepper
Filling:
1 onion, chopped
3 cloves garlic, minced
8 ounces button mushrooms, sliced
5 ounces fresh spinach, roughly chopped (about 5-6 cups)
1 tablespoon fresh thyme OR a teaspoon dried
1 tablespoon fresh rosemary OR 1 teaspoon dried
1 (Oz) package extra-firm tofu
¼ cup nutritional yeast
¼ teaspoon turmeric
½ teaspoon sea salt
¼ teaspoon black pepper
2 tomatoes, thinly sliced (optional, for topping)
Directions:
Preheat oven to 400 degrees. Line a 10-inch pie pan with parchment paper, cutting off excess paper around the edges.
In a small bowl, combine the flax meal and water. Set aside to thicken.
Peel and shed the potatoes if using fresh potatoes. Squeeze the moisture out of the potatoes and pat dry. Transfer to a bowl and add the flax mixture, garlic powder, and onion powder. Mix thoroughly.
Pat the shredded potatoes into the prepared pie pan, making sure to cover the entire bottom and sides. Season with salt and pepper to taste. Bake for 10-15 minutes, until the potatoes begin to brown. Set aside to cool.
In a nonstick skillet over medium-high heat, sauté the onion, garlic, mushrooms, spinach, thyme, and rosemary in a small amount of water until tender, about 8 minutes. Remove from heat and drain any extra moisture from the vegetables.
Combine the tofu, nutritional yeast, salt and pepper in a food processor or blender and blend until smooth and creamy. Transfer to a mixing bowl and add the sautéed vegetables. Mix thoroughly.
Spread the tofu-mushroom mixture over the potato crust in the pie pan. Top with tomato slices if using.
Bake at 375 degrees for 30-4- minutes, or until firmly set. Let stand for 15-20 minutes, then cut into wedges to serve.
