4–5 gallons of peanut oil (amount will vary based on size of pot and turkey)
For the Cajun Rub:
¼ cup chili powder
¼ cup paprika
¼ cup pepper
2 Tbsp salt
1½ Tbsp onion powder
1½ Tbsp garlic powder
1 Tbsp cayenne
For the Cajun Injection:
1 lager beer (12 oz.)
¼ cup lemon juice
2 Tbsp Worcestershire sauce
¾ cup honey
1 Tbsp crab boil
¼ cup apple cider vinegar
¼ cup of garlic, minced
1 Tbsp salt
¼ cup of Cajun rub
3 bay leaves
½ cup unsalted butter, diced

30–36-quart turkey frying pot with turkey stand and handle
Long-stem oil thermometer

Fried Turkey | Cajun Fried Turkey Recipe
I am heavily influenced by my Cajun friends and their cooking. We have been frying turkeys for over 20 years and are excited to bring you our simple method. In this recipe we are going to be using our Brine & Holy Voodoo seasoning. Feel free to use your favorite products and make this recipe your own. The Holy Voodoo does have a little sugar in it which will yield a slightly darker turkey. Trust us when we say it's delicious. Enjoy!

Not Your Grandpa's Fried Turkey | 2023 Update | Step-by-Step | How to Deep Fry a Turkey

Instructions on how to fry a turkey:
Start out by setting the level of your oil correctly.
1) Put unseasoned turkey in empty fryer pot
2) Fill with water until it’s 2-3 inches below the top of the Turkey
3) Take Turkey out
4) Mark water level
5) Empty pot and fill with oil to line
6) Make sure to drop the Turkey in very slowly
You need to know the safety tips for deep frying.
1) Protect your property. Cook away from the house in the yard if need be.
2) Fully defrost your turkey
3) Dry the turkey thoroughly (water and oil don’t mix, especially when hot)
4) Raise temperature of oil to 375 degrees. It will drop drastically when you put in a cold Turkey.
5) CUT THE FLAME OFF BEFORE YOU START DROPPING IN THE TURKEY IN CASE YOU HAVE AN OVERFLOW. Cut the flame back on once the oil is stable.
Instructions:
1) Ensure your turkey is completely defrosted and dry!
2) Inject your turkey, (you really can't overdo this part)
3) Use a little spray oil for a binder
4) Season
5) Truss it and get it on the turkey hanger
6) Preheat your oil to 375, drop it in (cut the flame off first) and relight once the turkey is in to hold around 325
8) Once your thermometer says 157 pull the turkey! (about 3.5 minutes per lb.)
