PANEER TIKKA KATHI ROLL
Paneer Tikka Roll
Preparation time 10 minutes
Cooking time 20-25 minutes
Serve 2
Ingredients
For Marination
400 gms Paneer, cut into cubes, पनीर
Salt to taste, नमक स्वादअनुसार
½ tbsp Mustard oil, सरसों का तेल
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
A pinch of asafoetida, हींग
1 medium size Green bell pepper, cut into cubes, हरी शिमला मिर्च
1 medium size Red bell pepper, cut into cubes, लाल शिमला मिर्च
1 medium Onion, cut into quarter, प्याज
For Hung Curd Mixture
½ cup Hung curd, टंगा हुआ दही
1 tbsp Mayonnaise, मेयोनिज
2 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
A pinch of asafoetida, हींग
½ tsp Coriander powder, धनिया पाउडर
A pinch of cumin powder, जीरा पाउडर
Salt to taste, नमक स्वादअनुसार
½ tbsp Roasted Gram flour, भुने चने का बेसन
1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
For Dough
1 cup Refined flour, मैदा
½ cup Whole wheat flour, गेहूं का आटा
Salt to taste, नमक स्वादअनुसार
1 tbsp Curd, दही
Water, पानी
1 tsp Ghee, घी
For Masala
2 Black cardamom, बड़ी इलायची
5-6 Green cardamom, हरी इलायची
1 tbsp Black peppercorns, काली मिर्च के दाने
4-5 Cloves, लॉन्ग
1 tsp Coriander seeds, धनिया के बीज
½ tsp Cumin seeds, जीरा
½ tsp Fennel seeds, सौंफ़
Salt to taste, नमक स्वादअनुसार
1 tsp Dry Fenugreek leaves, crushed, कसूरी मेथी
1 tsp Dry Mint leaves, crushed, पुदीना पत्ता
For Salad
1 large Onion, sliced, प्याज
1 Green chilli, finely chopped, हरी मिर्च
Salt to taste, नमक स्वादअनुसार
1 tsp Lemon juice, नींबू का रस
For Paneer Tikka
½ tbsp Ghee, घी
For Roti
2-3 tsp Ghee, घी
For Assembling
Salad, सलाद
Mint chutney, पुदीने की चटनी
Prepared Paneer Tikka, तैयार किया हुआ पनीर टिक्का
Prepared Masala, तैयार किया हुआ मसाला
Ghee for brushing, घी
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Marination
In a bowl, add paneer, salt to taste, mustard oil, degi red chilli powder, a pinch of asafoetida and marinate it well.
Add green bell pepper, red bell pepper, onion and mix everything well.
For Hung Curd Mixture
In a bowl, add hung curd, mayonnaise, degi red chilli powder, a pinch of asafoetida, and coriander powder.
A pinch of cumin powder, salt to taste, roasted gram flour and mix it well.
Transfer the marinated paneer mixture into the bowl and mix everything well.
Keep aside for 10 minutes.
For Dough
In a bowl, add refined flour. Whole Wheat flour, salt to taste, curd and water.
Knead a semi soft dough. Add ghee and knead it again properly.
Cover it with a damp cloth and rest for 10 minutes.
For Masala
In a bowl, add black cardamom, green cardamom, black peppercorns, cloves, and coriander seeds.
Add cumin seeds, fennel seeds, salt to taste, dry fenugreek leaves, dry mint leaves.
For Salad
In a bowl, add sliced onion, green chilli, salt to taste, lemon juice and mix well.
For Paneer Tikka
Skewer the marinated vegetables and paneer and set aside till in use.
Heat ghee on a grill pan, once it's hot, roast the prepared paneer tikka skewers on the grill pan.
Basting with ghee and cook from all sides.
Transfer the cooked tikka to the plate and keep aside for further use.
For Roti
Take a small portion of the dough and roll it thin using a rolling pin.
Heat a flat pan and roast it on both sides, apply some ghee and cook until light brown from both sides. Keep aside for further use.
For Assembling Paneer Tikka Roll
Take one roti and place the salad in the center of the roti.
Add some mint chutney, prepared paneer tikka, sprinkle some masala and roll it up.
Garnish it with coriander sprig and serve hot.

Ingredients for Paneer Tikka Rolls:
Capsicum, Onion, Tomato - 1 each
Paneer - 200g
Besan & Oil - 1 tbsp each
Ginger - 1/2 inch
Garlic - 4 cloves
Kashmiri Red Chilli Powder - 1 1/2 tsp
Garam Masala, Jeera Powder, Black Salt, Kasoori methi - 1/2 tsp
Chat Masala - 1 tsp
Salt - to taste
Water - 1/3 cup
Frozen Puff Parathas - 5
Mayonnaise - 1 tbsp each for 5 rolls
Fresh Green Chutney - 1 tsp each for 5 rolls
Chopped Coriander & Onions
Slit Green Chillies & Lemon Juice

Oven For Baking - (28liter is good enough)
