How To make Steak and Onion Spring Rolls
4 oz Slice Rump Steak
3 tb Teriyaki Sauce
2 Spring Onions w/ 3" of stalk
PREPARE IN ADVANCE: Cut onions in half lengthwise, the cut into 4" pieces. Place the steak between sheets of greasproof paper and pound into 1/8" thickness. Cut the steaks in half crosswise. Arrange the strip of onions down the length of each piece of meat. Starting with the wide end, roll into tight cylinders. Secure with toothpicks. TO COOK: Preheat grill. Dip rolls in Teriaki sauce and grill them 3" from heat for 3 minutes. Dip again in sauce and grill for another 3 minutes. Remove toothpicks, trim ends, and cut into 1" pieces. Stand each piece on end.

Vietnamese Spring Rolls Recipe Ingredients:
►1 lb Large Shrimp (21-25 count), peeled and deveined (keep the shells)
►3 oz Vermicelli Rice Noodles
►1/2 Butter Lettuce (15 leaves)
►2 Carrots, peeled and julienned
►1/2 English Cucumber julienned (or 3 small cucumbers)
►1 cup Cilantro sprigs
►15 Round Rice Paper Sheets (8.5” diameter)
Vietnamese Springroll Dipping Sauce:
► 1/3 cup water (preferably filtered)
► 1/4 cup fish sauce (three crabs brand)
► 1/4 cup granulated sugar, or to taste
► 2 Tbsp lime juice (freshly squeezed from 1 lime)
► 2 tsp rice wine vinegar
► 2 tsp chili garlic sauce, or to taste (more will make it spicier)
► 1 garlic clove, grated of finely minced
► 2 tsp sesame oil
► 1 tbsp shredded carrot
Peanut Dipping Sauce:
► 1 cup sesame ginger dressing (Newmans Own brand)

SPRING ROLLS⤵️
I’m not getting into a debate with you about the name of these. I call them spring rolls. We can agree to disagree ????
1 lb of pork belly/ pork roast/ pork shoulder/ pork butt
1 tsp salt
1 lb of shrimp
Vermicelli noodles
Rice paper
Lettuce
VERMICELLI NOODLES
1. Cook the noodles according to package. Mine said to bring pot of water to boil and cook for 5 minutes. Thoroughly drain under cold water

PORK:
1. Bring a pot of water to boil and then season with 1 tsp of salt.
2. Add your pork, bring back to boil, then reduce heat to simmer and cook for 20-30 mins (depending on the cut/ size of your pork).
3. Allow to cool then thinly slice
Note: You will know your pork is done when you stick a chopstick inside your pork and the water runs clear. If it’s pink, then it need to cook more.

SHRIMP:
1. Bring a pot of water to boil and cook shrimp until cooked through. Mine took 2 minutes. Yours might take longer or shorter depending on the size of your shrimp.
2. Allow to cool then slice down the middle of your shrimp.

LETTUCE
1. You can leave this whole or shred them like I did

Chinese Beef Spring Roll Recipe (Chinese Style Cooking Recipe)
Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.
Ingredients:
150g Mince Beef
2 Leeks
1 Carrot
5g Ginger
2 Cloves Garlic
2 Tsp Soy Sauce
2 Tbsp Peanut Oil
1 Pack of 30 Spring Roll Wraps
1 Tsp Ground Red Pepper
Salt to Taste
Method:
1. Finely chop the leeks and ginger.
2. Finely chop the garlic and grated the carrot.
3. Heat the peanut oil in the wok and fry the leeks, ginger and garlic, fry for 2 minutes until softened.
4. Add the minced beef and fry for 2 minutes.
5. Add the carrot and fry for 5 minutes.
6. Add ground pepper, soy sauce and salt, fry for 2 minutes.
7. Remove from the wok onto a dish to cool.
8. Take one of the wrap's but cover the rest to avoid drying out.
9. Spread 1 Tbsp of the filling on a corner of the wrapper.
10. Roll once from the corner and fold the two sides in.
11. Then roll tightly until the end using water to seal each joint.
12. Repeat this process until filling is used.
13. Heat 1 litre of oil in the wok until hot and add spring rolls one at the time.
14. Fry for 2 to 4 minutes until golden.
15. Remove from oil and drain.
16. Transfer to a dish and serve.
Tip: Wet the edges a little with water, this helps to seal the wrapper.
