How To make Cabbage and Bacon (Irish)
1 x Lg or 2 small Savoy cabbages
8 x Strips bacon
1 x Salt and pepper
4 x Whole allspice berries
300 ml Bacon or chicken stock
Cut the cabbage in half and boil for 15 minutes in salted water. Drain, and soak in cold water for 1 minute, then drain well and slice. Line the bottom of a casserole with half the bacon strips, then put the cabbage on top and add the seasonings. Add enough stock to barely cover, then put the remaining strips of bacon on top. Cover and simmer for an hour, until most of the liquid is absorbed.

Hi guys, welcome to Marks Irish Kitchen where i do recipes that the whole family can enjoy. todays video is for probably the most famous Irish recipe of all time, boiled bacon and cabbage. This traditional dish is served with mashed potatoes or champ ( a mix of potatoes and scallions). Although it is really tasty, it is probably the simplest dish to prepare. it uses just 1 pot, a joint of pork and a head of cabbage.
INGREDIENTS
900-1350g collar of bacon
1 medium sized cabbage
METHOD
Soak the bacon overnight in cold water to remove the excess salt
Remove and place in a large pot of boiling water and bring back to the boil.
Remove the scum, cover and simmer for 1.5 hours and test if its cooked. If not return to the water
and cook for anther 30 minutes.
Cut the cabbage in half, remove the hard stalk, slice and wash.
Remove the bacon from the pot and let rest for 15 minutes
Add the cabbage to the boiling bacon water and cook for 10 minutes so its tender but keeps a slight bite and retains its colour.
Drain the cabbage well and serve with the sliced bacon.

People in Ireland have eaten this for centuries - although when times were tough, probably without the bacon (milk was often used instead).
Is it necessary to say that all the ingredients are boiled until cooked? Bacon takes about 20 minutes/pound, potatoes take about 20 minutes and cabbage about 8 minutes.
